Tailoring gets some pretty good enchants to both legs and cloaks, can make their own bags.
All the gathering professions get a semi-useful buff depending on your class.
Yes, those 3 get "the best buffs" but it really depends on what kind of player you want to be. Don't forget, you can buy the eternal belt buckle from BS's so anyone can get that extra gem slot.
Not everyone plays to be "the best." I don't. I play to enjoy myself and spend time with my friends who are all over the country. I also like to help people out which is something that Tailoring lets me do--I can make bags. Why do you have to be obsessed with being the best?
I've seen you post about stuff like this and you've said you don't have time to raid all week, but then again, not everyone does--I don't. So, if you don't have time to raid and be the best, why worry about it? Sorry to sound critical of you, but I don't see why it matters if these 3 have most of the best buffs. If you want those buffs, take those professions.

Tailoring - 65.5 spellpower, -23 haste - (Assumes 1/4 uptime for lightweave proc, 295 spellpower for 15s out of 60s)
Jewelcrafting - 48 spellpower - (3x 39sp instead of 3x 23sp)
Alchemy - 47 spellpower - (172sp flask w/ mixology vs 125 baseline)
Blacksmithing - 46 spellpower - (2x 23sp epic gems in extra sockets)
Enchanting - 46 spellpower - (23sp x 2 rings)
Inscription - 46 spellpower - (70sp vs 24sp on epic Sons inscription)
Leatherworking - 46 spellpower - (76sp fur lining - 30sp enchant)
Engineering - 45 haste, -1 spellpower - (+27sp -23haste on cloak, -28sp +68haste on gloves -- also gets a burst of speed basically once per boss fight when using Icewalker instead of runspeed, which could come in minor handy for raiding)
Skinning - 40 crit
Mining - 60 stamina
Herbalism - 3600 healing over 5 seconds

Seems pretty even to me. The gathering professions are a little lacking, but that's to be expected since they're pure money-makers.

Each profession has its ups and downs, it happens and will continue to happen. The downs of JC and BS are just smaller than the downs of say Engineering.
It should also be mentioned that the Tailoring cloak enchant for melee/physical dps (that uses attack power) is the best cloak enchant in the game. Its the berserking enchant on your cloak.

i rolled alch because our guildies were all become JC's. i got freya bag every time we killed her, and i never spend gold on consumables (never-ending mana potion & reusable flask). the flask may not be as good as a real flask, but it saves me lots of gold and i don't need the extra spell power to heal the content we raid. i'm happy with alchemy, as a raiding profession. i would NOT give that up for jewelcrafting bonuses.

Many melee, or Arms warriors and Feral Druids?
BS and JC may be a tad more versatile, but they are not head and shoulders above the others.

In other news, does not the Leatherworking offer the exact same advantage as Enchanting (80AP more than the non profession version)? Heaven forbid you may also be able to create best in slot gear for your character without paying somebody to craft such
highly desirable
gear for you. You can also make a profit should this recipe be wanted by another player? Gracious me.
