Prot Paladin can solo pretty much anything.
They have great defensive talents, couple that with the fact that pallies have so many lifesaving buttons, they form an unstoppable soloing machine.

Blood-spec DKs are pretty good at facerolling solo through instances. They have enough self-healing for it.

Blood DK, Protadin, Feral Druid.
Blood for self healing through damage.
Pali for self healing through spells and life-save abilities(Bubble-hearth anyone?)
Druid for self healing through spells and getting melee crits.
I have a decently geared feral druid and manage to solo most 60 raids, haven't tried any 70s though.

As many have said, I've seen a Blood DK solo Halls of Lightning, most of H. ToC, and alot of other things. He's quite good.

I'd say Paladin, too. I play both a protection specced Paladin, and a Feral tank bear and hell yes... the Paladin wins it clearly. There is a few bosses, where a druid bear simply can not take the win due to abilities he does not have, while a Paladin can.
While it's a low level example, try Upper Blackrock Spire and General Drakkisath with a level 80 protection paladin, and a level 80 feral tank druid, both in quested Icecrown gear, and a few reputation items.
The result: the paladin will win the fight, the druid will always die, no matter what enchants, gems, and buff food you add. Why? The Drakkisath adds spam conflagaration, the the druid will just take hits without being able to react. The paladin will see the conflag spell miss, the druid not. You can't even avoid the Drakkisath adds, because the hibernate spell will in 100% fail on the adds, so you always have two adds making the druid vulnerable.
The same happens on a few other boss encounters, too. This is just the most prominent I could remember.
Thus: paladin is the solo winner.

Prot Paladin. I've soloed up to the second boss in Violet Hold. The only reason I died there was because I couldn't get out of combat quick enough before the boss to replenish my mana.
