What to do with a heirloom

Okay, so my main is a Disc priest, wanted to get a new warrior up to 80 because i got sick and tired of there not being any tanks in LFG (thanks patch 3.3 for making this a relic)
Point is I knew about heirloom items and had more badges than I knew what to do with, so I got him what I deemed the best shoulders, and chest, passing on trinkets in favor of....
the one handed sword.
Now I was just browsing these forums, found another thread giving advice on how to only use two handed weapons when lvling...so my question is how would you handle the one hander?
Dual spec is amazing. And so the heirloom with whatever shield I find works great in Prot spec, and because it keeps getting better, it does enough damage that prot didnt seem too slow. The other spec is fury, because I just didnt like how arms felt when trying it out early on.
At first I am like "okay, avoid any "two handed " talents in fury until you respect near 60 and pick up titans grip" and so proceeded to with that plan, having a shield in the off hand while in fury....
lets just say I read whirlwind again, and decided this wasnt good. Thankfully I am now 57, have the demon bane sword for blasted lands and the two work well enough but still as a theroetical, What spec would you lvl with if you wanted to use the heirloom weapons?

one handed, dual weild fury...
edit:
I would probably use something like this
http://www.wowhead.com/?talent#LZGx00EVu0xRVz
as a base for leveling.
the rest of the points are your choice...

You simply use a 2h as fury, untill you can wear two.
Two onehanders will do more damage, especially if you have some hit rating. Fury doesn't rely on abilities based on main hand weapon damage, which is what makes a twohander mandatory for arms.

if you remember, pre WOTL, 1h fury was the way to go... the main changes of wotlk was the addition of tg, which basically means, you can play a fury warrior up to that level the same way you would have had before. (granted, wep mastery has been moved, and stuff like bloodsurge added, but its still pretty much the same)
and using a 2 hander wouldnt solve the OPs problem of wanting to use his 1h heirloom wep, would it? :P

If you plan to tank a lot the 1hander will suit you well.
For leveling though 2hander is rather better option (unless you plan to level in prot).
Be aware that leveling in prot will not be as effective as dps trees till late 40ties. Also you are going to be just fine in tanking casual 5mans with either dps spec as long as you have some prot specific gear (1h + shield and some sta stacking items).

well upon actually taking the time to look it up there are two handed hierlooms, the PvP, the agility based one, and then the Axe....so okay you can lvl with a 2 handed axe and have it be an heirloom, but thanks for your time and advice

Go arms, use
this
. Pown things in 3 hits. Be happy.
I personally hated Fury, so I went with arms practically all the way to 80. I started out fury leveling, and got bloodthirst, thinking "woohoo, self heals!" Ya.... Not so much.
It helps, sure, but the mobs last twice as long.
Fury- run up(intercept costs rage), auto-BT-WW-auto-auto-so on-still going.
Arms- Charge-rend-MS-slam-OP-execute-dead mob(up to 2 levels higher than you) unless nothing crit.
Just IMO, Arms>>>>>Fury if you get bored easily and don't like running everywhere.
