outside of a very difficult progression fight, i would only keep 2 pieces on.
otherwise, it depends on what other goodies you have in your bag. i think the
helm of vital protection
is a good choice, but that's because i don't have the
malygos legs
yet - those pretty much trump everything.
then again, the
OS chest
is nice for avoidance fights. it is just going to come down to having to cart it all around and learn to love your closet gnome.

I usually keep the shoulders and then swap around between other pieces to keep the 2-piece bonus.
