They sit at there PCs partying and hack the internet so they can see through your video cams and laugh there buts off at the ppl yelling and screeming about maitnence and if its boring then they extend it :P
Lol, wow. That's actually not impossible for them.
Easy, actually, seeing as they already have a trusted executable on our PC's ;-)

They tried to go "maintenance free" once back in BC. It was a complete disaster. After only 2 weeks of no maintenance servers started to freak out.
Honestly i think they run diagnostics. Make sure all the hardware is running properly. Probably doing scans of the hard drives to make sure there are no bad sectors. Delete worthless cached data that would otherwise build up endlessly. They probably have a custom suite of tests to run on each server just to make sure they are running as good as can be.

There are two things though - the rolling restarts, where servers are down for 15 mins, and the big downtime, when the servers are down for 6-8 hours.
Rolling restart would describe exactly that - the server just needs a restart, flush out the memory to get rid of all the crap that's been lodged there by bad code, and start afresh.
The big downtime would allow them to run backups and diagnostics that would slow the server too much if they did while live. It allows them to do physical maintenance - replacing hard drives, replacing memory, all the physical components that you can't do while the server is on.
Having it all on Tuesday just means that they can do it all in one hit, rather than have staff sitting there at 3am in the morning every day of the week as they fix one server at a time. It would simply cost too much and be too inefficient if servers came down one at a time.

They strip off their clothes, run naked throught Blizz HQ, and spray the servers with Mountain Dew, screaming "I am the Lizard Queen!".
That, or they nap. I think we can give them 8 hours a week.

They have a sweepstake as to how many 'What do Blizzard do on Maintenance Day' threads will be created on various forum.
They have to switcth the servers off since they need the massive computing power to calculate the numbers involved in the count.
