Take all the information of GM tickets, raid lockouts/loot distribution, node information (Gathering professions), double check coding for bugs/errors.
To put VERY simply,
Lets say that WoW is your house, over the course of one week 1-2 people can build up dishes, pile laundry, fill trash cans...etc.
Weekly maintenance is the maid that shows up early every tuesday morning to clean up everything 10 million + players leave every week.
Keeps everything in the coding area smooth and flowing for when something big (ie, major content patch, x-pac) is released.
Capeesh?

Probably stuff like database sanity checks that are too expensive to run while the servers are up, rebuilding RAID arrays that have a failed drive but weren't critical enough to justify taking a server down right away, scan all media for possible defects, stuff like that. General preventative maintenance, in short.
