Undead is immune to fear, sleep, charm for 5 seconds. Really nice against people that use those.
Tauren is good for the AoE stun and bonus life.
Those are the 2 best for PvP I think.
Arms/Fury hybrid will always be he best for dps and being able to take some damage.
Prot won't do much damage but isn't too bad in some BGs. For AV you can tank almost every non player in there if you have good enough gear at once. Also gurading a flag in AV, AB or base in eots you can live forever keeping the other team from gaining that spot as fast. For fun you could always stack up shield block rating up to 800 or so and have fun with that even though it still isn't that viable as dps, but can still tank stuff.

Your guide:
I think having a notice that mentions your intentions (battlegrounds, duels, arena, etc.) would be useful, especially since different platforms can dictate different methods of combat (arena, for example).
Discuss some of the most important issues, such as mobility & why warriors are the way they are. This could rightfully go into one of the first sections, that way players read it & understand from the get-go what the class is like in PVP. Of course, you'll want to flag this as "newbie" paragraph & thusly put it at the top of your guide - newbies aren't going to read through 7 topics of high level interest to find a "What can warriors do in PVP?" related paragraph (this is a very common question actually).
As far as the actual warrior vs class thing...go to a class forum, for example rogues, & ask them what they do to counter warriors, from a high level standpoint. You can simplify it based on lower level skills available, etc. but you'll get the ideas & tactics used from a high level point. Take notes & then compare against what warriors try to do against rogues. Doing this, you can see the differences in tactics & experience from players to get the best idea of what exactly should be written. It may sound like a lot of work, but I bet you can get some real bonafide answers here at Wowhead.
My thoughts:
I know you didn't ask for this type of information, but what I tried to accomplish with, for example, the FAQ at the top of the forums is to keep it short & simple early on then place more detail in other paragraphs or areas.
One of the most important things to consider when creating the contents of your guide is that people have to read it. I would imagine some of the top tips to be that using things such as acronyms, subjective phrases & terminology can be detrimental to your purpose. Base it on a view as low as level 19 PVP, but don't dumb it down so much that higher level players will think it's a newbie guide.
For example, the first time you mention Mortal Strike ensure that you spell it out & maybe even link it to the database list of ranks for the ability (they can mouseover for tooltip & see all ranks at once). Successive uses can then be abbreviated to MS without worry.
Space your paragraphs out & keep them small. Keeping your paragraphs small in look makes them appear to be less to read (it can be very discouraging to readers if otherwise).
Try to keep your reader engaged by using different words & phrases for each topic. A common reason for boredom is having every paragraph start off the same way or multiple sentences sounding alike. Stimulate their brain as much as possible!
Try to present information that is justifiable or only general, factual information & list exceptions (with reasons) where necessary. Attempting to anticipate what the reader will ask
next
when reading your guide will allow you a more complete picture. Also, make sure you present this information covering both low & high level viewpoints (e.g. using Rend in PVP is bad, but it is good when playing against rogues, or using Charge in battlegrounds may work, but generally in Arena it is not as accessible).

7. It's very difficult to beat a skilled frost mage.
Charge/Intercept: *Blink* Crap where'd he go?
*Ice Barrier* Wait I wacked a few times already, why hasn't his health gone down much?
Getting Ready to Execute: *Ice Block* Crap he's Immune, I'll just bandage *Interrupted", wth? I gotta deal with this Water elemental now can't bandage.
I'll just spell reflect *equip shield, spell reflect* *intercept* Crap I forgot to re-equip my 2Hander. Funny, I reflected a sheep spell a few times. Caught the mage by surprise (Best time to bandage I guess).
Skilled Frost mage=dead skilled warrior.
