THE paladin tanking macro:
/cast Righteous Defense; Righteous Defense
Pally taunts have to be used on the player who is being hit, not the mob doing the hitting--but that requires a lot of fancy targetting that you often don't have time for. This macro will use the taunt on a player if you have a player targetted, or on the player the mob is attacking if you have a mob targetted. It lets you use RD just like a ranged Taunt.

Though not directly related to tanking, this is a macro I developed to suit my warrior-wants.
/run PickupInventoryItem(17); if CursorHasItem()then PickupContainerItem(4,4);PickupInventoryItem(16);PickupContainerItem(4,3);else PickupContainerItem(4,3);AutoEquipCursorItem();PickupContainerItem(4,4);AutoEquipCursorItem();end;
Change from 1-H weapon and Shield, to 2-H weapon and vice-versa.
Advantages:
1)No item names are used!
2)Items are returned each time to specific bag slots!
NOTE: Change each instance of (3,3) and (3,4) to the bag slot YOU want to use for your weapon and shield, following these rules:
1)Weapon will always be in (3,3) or whatever slot you change each instance of that to.
2)Shield will be in (3,4) or whatever slot you change each instance of that to, EXCEPT when you have 1-H Weapon and Shield equipped on character, in which case (3,4) is EMPTY.
See
http://www.wowwiki.com/API_PickupContainerItem
for info regarding the method whose arguments you will want to change. In short, it's (BagID,Slot), where BagID 0 is main backpack, and 1,2,3,4 are the bags from RIGHT to LEFT. Slot is the slot inside the bag, starting with 1 for the upper-left slot, and reading like a book from left to right, top to bottom for 2,3,4,....
edit: Mortipher, you might try adding a /stopcasting between your /casts in an attempt to make Heroic Strike toggle.

/cast Sunder Armor; Sunder Armor
/cast Heroic Strike
A similar macro can be awesome for Druid tanks to gain aggro easily on multiple targets with Lacerate:
/cast Lacerate; Lacerate
That way you can have your auto-attacks spamming and be hitting Mangle (Maul? heh) on the main target and mouseover all the other mobs you're holding, rotating lacerate across each one.

I'm copying this one, definately! No more "tab, lacerate, tab, lacerate, tab, lacerate" :)

Yeah, that got old fast. Glad you like it :). I think I stole the idea from the official forums at some point as it's not in the wowwiki druid macros list AFAIK.

Here's another one, I thought of the other day:
/cast Blessing of Protection(Rank 3); Blessing of Protection(Rank 3)
Same as the RD macro, but with BoP. The reason why you use this: What this macro will do is, if you have a valid player targetted (someone in your party, etc.), it will cast BoP on that player. But if you have a mob targetted, it will cast it on whatever player that mob is currently targetting.
This allows you to actually "taunt" untauntable mobs. Say for some reason your paladin tank loses aggro on Maiden of Virtue, who can't be taunted. Well, Maiden comes stomping across the room towards that over-zealous fire mage who pulled aggro. You can't taunt her, she's immune to stuns, and pallies don't have much in the way of snap aggro. But you CAN use this macro. When you do, if you have Maiden targetted, it will automatically cast BoP on the mage that has aggro. Even a taunt-immune boss won't attack a target that's immune to damage--so Maiden turns around and comes right back to the player who is second on the aggro list. That had BETTER be you--God help you if it isn't. But if it is, you just taunted an un-tauntable boss.

/cast Blessing of Protection(Rank 3); Blessing of Protection(Rank 3)
Sneaky.
can always just enable auto self cast
I have Alt set as my self-cast modifier key and I have self-cast with no target turned on. I'm so used to hitting Alt and not having to hit anything when I don't have a target I would probably be totally screwed if it changed.

Remember that you almost never need to include the rank of spell being cast, as it will generally automatically select the highest rank of the named spell available.
The one and only exception I'm aware of is in the case of poisons, as of patch 2.1, which require their rank to be specified.

Also abilities with parentheses in them are strange. For example:
/cast Faerie Fire (Feral)()
You have to specify the empty parentheses if you want it to auto-select rank because otherwise it will attempt to interpret "Feral" as a rank and cast the caster form version of Faerie Fire.
