Can someone please tell me if a certain # of defence will render a tank uncrushable? Or how the amount of defence works. Trying to help improve my guilds tanks but i dont know much about it to be honest. I heard from some ppl that 4XX def was cap, from others that u need at least 530. etc.

No amount of defense rating will make you uncrushable :)
490 defense rating will make you unCRITtable but not uncrushable.
For warriors to become uncrushable, they need all the highest shield block rating items in the game, but this is only in theory. There was a post on the Elitist Jerks forum about becoming uncrushable, but I assume you're talking about uncrittable.
So the answer is to have 490 defense rating before starting Kara. To avoid crushing blows, just use shield block :)

To be uncrushable you need 102.something% avoidance I believe. My numbers may be off. So you add your Parry chance, Dodge, Block, 5% boss Miss rate, the extra miss rate defense gives you and see if its the magic number.
For Warriors. Shield Block gives 75% block chance, so they are pretty much uncrushable by default.
Druids thanks to lack of Parry and Block can not be uncrushable.
Paladins can be, but they have to really stack avoidance thanks to Holy Shield only being 30% block chance.
The speed the mob attacks at also comes into play. At least for a Warrior. Paladins have 8 charges on Holy Shield and a Warrior 2. So if you block 2 attacks with Shield Block before the cooldown is up, you are now crushable.
Uncritable by a level 73 mob (Bosses) is 490 defense.

You're forgetting redoubt, which can add another 30% chance to block. But it's a proc chance so you can't count on it.

Also remember that you can only block when facing a mob. If a mob attacks from behind you can't block and thus can get crushed.

isnt Crit and Crushing blow pretty much the same thing?

A crit does 200% of normal damage. A crushing blow does 150% of normal damage. Only mobs with weapon skill higher than the player's base defense can perform crushing blows (in other words, mobs level 71+ can crush level 70 players). You can avoid crits by equipping enough defense, but you cannot avoid crushing blows. To avoid crushing blows, you must push them off the attack table, meaning that all attacks agains you must be either missed, dodged, parried, or blocked.
