1st: If you're running a Ruptureless rotation, get rid of Bloodspatter. You never use Rupture unless you absolutely need to and Garrote doesn't see enough action to warrant spending two talent points on it. I'd recommend moving the points into Fleet Footed so it's easier to move between targets and get to a target from Stealth.
2nd: Mutilate has always suffered on trash. And it's only gotten worse as gear has severely started to outclass the original Northrend Dungeon content. Everything just dies way too fast. Either don't worry about it because trash DPS doesn't really matter as long as the mobs die in a timely manner, or off-spec Combat which is worlds better than Assassination at dealing with trash and multi-target movement encounters.
One thing that
might
help on multi-mob packs is Tricks the tank and then select a target no one else is attacking. That normally gives you enough time to at least bleed the target and get up HfB, which is probably your greatest source of damage on mobs that die in a few seconds (I'd also recommend doing it on a caster if you can and keep it locked down to assist the party somewhat).
I don't think you're doing anything wrong, it's just the nature of the spec you're running.

I'm pretty sure your gear doesn't dictate ruptureless cycles
I wasn't sure about that either... I've tried a bit of a search, but not been able to figure out at what point I should be switching from a rupture, to a ruptureless cycle?
Regardless you probably won't be using rupture in most heroics anyway. I still believe unless you are in 4pc T8 ruptureless is probably the way to go to maximize your envenom buff uptime.
Put your gear in a spreadsheet and then choose the cycle with rupture, then one without and see what tops the DPS. Simple. If you are on the edge, then likely, go with what you are more comfortable with until you get to say, about 100 DPS difference, then you really should be ruptureless and focusing on that. After that point, unless there is a major mechanics change, you should be speced and doing cycles to produce the best.

With mutilate, the faster the fight, the lower the dps....there is no way around that. I dual spec, and my sub rogue can get 5k on trash, but drops to about 1.7 on bosses. My assassin gets about 2.7k trash, but hits 4 on bosses (more than that if the rest of the group is weaker and the fight lasts longer or if i am really buffed up). Like mentioned earlier, we are boss killers, and the players that know the game well understand that.
