Too much STAM for heroics?

I'm in a small casual guild. My warrior is currently helping some guildies get geared up in heroics like H TOC. Since I only need 535 def (not 540) in heroics, I was able to gem/enchant things slightly different (on an alt gear set) to get 6% hit and 6% expertise (the caps for heroics). Now that I have hit those caps to help with threat, should I continue stacking STAM? Or would more STR be helpful (for threat)? My gut says STAM. It seems like I have plenty for heroics (like 35K HP), but I guess more STAM will give the guild healer more margin for error (moreso than equipping my 540 def gear). Threat is only a concern when my taunts are on cooldown and "bad stuff" happens... hopefully that is rare!

I know that I am geared for raids... but my friends are doing heroics. I'm helping my friends right now, not myself. I'll raid again later, hopefully with my friends along with me for the ride.
Thanks for the suggestion about the 25K HP being sufficient for heroics. I apparently have more than enough STAM. My healer is not very undergeared, but is still gearing up. Mostly, he is gaining experience with a healing build, having leveled as DPS. This is why I thought more STAM would be good to allow him some response time.
Perhaps then if I don't need more STAM as you suggest, I should go for STR, as I don't know what else I would take at this point. I understand I am not there in a DPS role, but with more STR, I will at least contribute to the battle more, and be able to grab threat more easily when that "bad stuff" happens. Plus it at least helps blocking... not the best tank stat, I know, but it's something.

Instead of stam try and stack some block value for heroics. You gain threat and survivability along with DPS. In heroics block is almost another avoidance stat once you've gotten enough of it, with the help of Critical Block you'll fully block any attack.

I agree with Shiverlynn... building a block set is worthwhile for a number of reasons and one of them is loleasy heroic farming. Quite honestly you can become all but immortal in a heroic with enough block value.
