Ive found that the easiest strategy is to hit them with a shield breaker, then charge, then while charging hit them with a thrust as soon as you're in range, and then if your defend is less than 3 use it as your running away, then turn around and repeat.
If you keep the enemy at range they wont even try to thrust so that little bit of extra damage each pass will allow you to win every time.

My tactic on all mobs.
Shieldbreaker when battle begins, and go in close. Run outside, shieldbreak and run inside again. Keep doing this (while stabbing, of course) until they "run away", charge and stab, and continue with shieldbreak/stab-method. With this method, I defeat 3 valiants and 4 champions without ever healing up, and usually never lose my defends.

Another bug along the same lines as the warrior defensive stance damage reduction:
Darkmoon Card: Death
will proc while jousting helping you win the match. This is most likely not intended.

Talents that increase your damage, also work on the jousting. My feral-druid always does 10% more than my shadowpriest.

A little tip for quickly taking down scouts (gargoyles):
Some of them fly low and other very low. Charge at the ones who fly very low. They'll be one-shot. The other you throw a Shield breaker at and position yourself directly below them, thrust once and they won't even have time to knock a shield off of you.

As for the champions/valiants.
Charge them as soon as they put distance between you.
If they're sticking too you, strafe in and back. When you turn you use a Shield breaker.
Thrust doesn't share a cooldown with anything. Use it directly after a charge or shield-breaker connects.
This is a very quick way of downing them

I didn't see anyone saying this but if you have a friend that is not very good at jousting you can attack his enemy while you are of the mount, I did it on my ele shaman, just asked for him to try to leave the enemy with 2 shield as 10% would take a little too long, you can also use this for the scouts, they don't attack you if you are on the ground without a mount and you still get credit for the kills.

For the Marks quests I engage from as far behind the target as possible, let them run, Charge, Turn into ShieldBreak range on the run past then run in and Thrust till the try to run for range. Back away slightly to Charge range, Charge, Turn into ShieldBreak range on the run past then run in and resume Thrust till the run again. Rinse and Repeat till victorious. I've managed 7 kills in seven minutes this way for the 2 Marks quests each day.
For Commanders at the Citadel, i clear a path to the commanders at the foot of the Stairway at the southern end which usually gets me most if not all of the skelies and lesser mounted targets then basicly se the same tactics as i outlined for the Marks quests. Important to note though is that you want to draw the commander up onto the stairway, lots of room to move around in and no Adds up there.
