Hey guys, just looking for some advice on my gear. As for utility, I am tanking Ulduar 10 and TotC 10, working toward TotGC 10. All advice is welcome, thanks!
Here
is my armory link.

I kept seeing a lot of misses at 170 hit and you are at 110. I would certainly consider replacing say that +def gem in your helm with +hit/+stam or +stam myself.
Noted. I do have quite a bit of def to spare, so that would work great. Thanks for your input. :D
Frankly our ToGC10 tank has roughly the same stats as you, except dodge he has about 28% and he has 2k more hp. So if you have decent healers you should be OK.
My guild's healers had a hard time keeping me off the floor in ToGC10, however, had little trouble with our other tank. I've been moving away from avoidance stats since our healers said my health was bouncing around everywhere.

Combo gems are fine, but you need to restrict them to the "bad" colors.
Helm: Def/Stam instead of Straight Defense
Weapon: Def/Stam instead of Dodge/Def
Shield: Straight Stamina instead of Dodge/Stam
Legs: Dodge/Stam instead of Straight Dodge
Boots: Feel free to use Def/Stam to pick up the 6 stamina socket, it's about an even tradeoff (10Def/21Stam vs 30 Stam) in my mind.
Just those gem changes are going to give you about 700 extra health.
Glove Enchant: The reason you use Expertise is for extra threat. However, 2% Threat Enchant (Armsman) is going to do WAY more for your threat than 15 Expertise Rating (~2 expertise), especially since you are over the dodge softcap (so you are only gaining 0.5% less chance to be parried).
Chest/Shield/Cloak Enchant: Since you are over the defense softcap, you can start to shift these three enchants into the EH enchants. For comparison, the chest is 22 def vs ~23.6 stamina (23.6*1.1*1.06*10=275 health) and shield is 20 def vs 18 stamina, so switch your chest first, then shield. Cloak is trading Defense for Agility, so you still keep some of the avoidance factor but you get a little bit of bonus crit and armor along with it.
Gear Upgrades: Dump Earthshaker Ring and get the 35 Triumph badge ring. You should be able to get the Ulduar crafted boots made for very cheaply these days as well. Your belt is also kinda marginal and the Ulduar crafted belt is far superior (and cheap). The cloak is meh, but not much you can do able that. The next Trophy you get you should pick up the Tier Gloves (which are very solid and gives you two-piece).
Edit: Two more things. First, for boot enchant, I'd go ahead and sacrifice 7 Stamina and get the Tuskar's Vitality for run speed bonus. It really is worth it.
Lastly, your spec. You need a little work here. My three main complaints are the 1/3 Incite, the 1/2 Imp Disarm, and the Sunder Armor glyph. Incite is WAY too good to skip any points in, as a tank you are converting well over 60% of your melee swings into Heroic Strikes and you'll want the full 15% crit bonus (especially as a Deep Wounds Spec). Imp Disarm is junk. You might think it's somehow worthwhile on Gormok, but it's not (at least I hope that's what you were thinking). Get rid of it and put that point into Incite. For the third point in incite, I'd suggest one of two things; 1) drop a point from Shield Spec and put it in Incite or 2) drop 2 points from Imp Revenge, put 1 in Incite and 1 in Cruelty.
Sunder Armor glyph is pretty bad. If anything it would be a convenience glyph for the Twins fight, but with Glyph of Devastate you can afford just to mouseover devastate and blow 3 GCDs to keep the off target debuffed.

I have since re-gemmed my helm for HR since I was severely lacking (missing taunts is baaaad). Also, I was planning on getting the 35 triumph ring ASAP, so I guess I'm on the right track there. Thanks a ton for your help on my spec and glyphs, I've been looking everywhere and never found a solid tank spec.

i never recommend gemming for hit. you said you're hitting the floor too much, so the defense is much more important than hit in that regards. you're not going to hitcap your taunts anyway.
do not shy away from avoidance, avoidance is great. just don't choose to go for straight avoidance over EH. porcell had some good suggestions for you to increase your health pool.
i would also recommend you replace your brewfest trinket with the badge armor one. the armor is great for ToGC, and it's use effect is really nice as well. overall, it's a much better trinket.

Alright, back to Porcell's def/stam in helm. I never said I wanted to get to the spell hitcap, just wanted to bend the RNG in my favor. Oh well.
The armor trink looked awesome too, it's on my upgrade list. Thanks, and thanks to ivanthebear as well.

As I understand it, you will need to use your cooldowns wisely on Gormok the Impaler in TotGC and generaly spec for survivability in TotGC. Therefore the glyph of shield wall is really needed. Improved disciplines without this glyph doesn't make much sense.
Also I'd recommend Critical Block over Puncture. Critical Block will give you both increased survivability and threat. Puncture only gives you slightly more threat (more rage for HS/cleaves).
