Starting to heal heroic, what should my stats look like?

Honestly with healers, most are able to jump right into heroics. You don't have to rely as heavily on stats at that point as the tank, who's taking the beating. I'd say as long as you've run all the dungeons on normal and are familiar with the fights in each of them, you're all set.

However if you've skipped most of them and are still in quest greens, might wanna run the instances first. ;)

Healing heroics will be difficult until you get some decent gear, so make sure your tank is always crit capped. Better yet, run with a tank who you know and is geared to make up for your starting defficentcy. Another good idea is to run with a class that gives the replenishment buff, a ret paladin being the best choice as he will buff you with blessing of kings or wisdom as well.

To start as a resto shaman in heroics I had:

15000 mana

1450 +heal with earthliving

about 300 mp5 with watershield

I found it difficult at first, but once you get a decent set of heroic gear it becomes far easier. In my valorous gear I can hand the keyboard to a monkey and it would get the job done >.<. As for talents, I use this setup for raiding:

That includes pretty much all the essential talents, though some people opt to put points in earthliving weapon though I do not think +50 heal is worth 3 talent points.
