What is "needed"?
Only realy needed professions are those to make everyones gear better:
Enchanting. Mats - no supporting profesion.
Jewelcrafting. Mats - there is mining but who cares for mining when you can just buy gems for honor and emblems?
Tailoring (for spellcasters). Mats - no supporting profesion.
Leatherworking (for non-spellcasters). Mats -
only aquired through skinning

If you don't like skinning, why not take another profession you DO like?
If you have a practical idea for improving a profession, there are support forums and suggestion forums that Blizzard actually reads, but they're not on WoWhead.com
I have several toons with various professions, I leveled them up because I was having fun with the professions. I have one who is skinning/mining, and sure, it's not fabulous and "bling" like jewelcrafting but it doesn't have to be. ;-)
Oh and just FYI: Leatherworking did get new drums recently. Maybe you haven't read the latest patch notes from the last few patches?

Idea to imrpove skinning:
Anytime someone skins a raid boss with 100% Arctic Fur drop chance, place the Fur on a roll visible to anyone who could have skinned it too.

Herbalism is useable (and useful) for all classes.
There are MANY types of herbs, with various uses in alchemy and inscription, plus the occasional item crafted by other professions that requires an herb/potion to craft it.
Herbalism also gives the "Lifeblood" spell which heals the herbalist. It may seem slight, but sometimes a quick heal + potion can mean the difference between a successful fight and a corpse run.
Some herbs sell for over 20g per stack!
Alchemy and inscription are very useful professions for all classes.
Alchemy crafts potions and elixirs used by all serious raiders (and even casual raiders who want to perform well during their limited raid opportunities). Alchemy has useful transmutations that are useful for many other professions.
Inscription makes glyphs, lots of glyphs, ranging in usefulness from amazing to silly (glyph of the penguin? Cute, but not really "useful" to boosting performance). Darkmoon cards, decent offhand items, and scrolls used by hunters to re-name their pet are among other Inscription goodies. Profession bonus: Better shoulder enchants than the "Sons of Hodir" variety, with no reputation grinding.
Any profession *can be* used by any class, and can provide benefits for any class. The key is to figure out what benefits you will enjoy most, and then use that profession. That's all.

Leatherworking is just a great profession. It makes long fights great, has amazing buffs to add to armor, and some minor procs. But at 80 the craftable armor sets are useless. Their great for offspec or as soon as you start heroics, but they'll be replaced by badge gear the next day. What's the point of having this craftable BOP gear if it's replaced the next day?

The sets may suck, but there's a reason why they drop craftable armor still. Skinning has become more important than ever thanks not only to the need for Heavy Borean & Nerubian Chitins, but also for the drums as well. It's an easy profession to level because all you have to do is kill mobs instead of searching for nodes, so of course it isn't going to be as highly desired as everything else. But if you don't like it, don't do it. Simple as that.

Since horde are generally big and hairy, well tauren are anyway, I say they should allow skinners to skin dead players from the opposing faction. Each race "dropping" their own specific leather.
Later on, they could add iLvl 258 (or something like it) LW recipes like Tauren Leggings or Night Elf Boots with insane mats requirements in the leather department.

wow. i read WoW related forums a lot and out of all the suggestions i have read this one is by far the least likely to be implemented.
skinning humanoids carries such a potent negative social stigma that it is extremely unlikely to ever be allowed unless they add a "Buffalo Bill" class to the game.
in addition, think about how difficult it would be to skin enemy players in battlegrounds. i don't know about you but in between defending myself and moving on to the next kill, i rarely have time to teabag or /hug an enemy player's corpse before i've got to be moving again. hanging around and waiting for the skinning cast bar is not high on my priority list.
to respond to the general thread, i've got skinning and herbalism on my DK. i started with skinning and mining but dropped mining once i realized you can only track one type of node at a time. skinning is a great money making gathering profession which requires minimal extra effort or time commitment. the only profession easier to level than skinning is first aid imo.

Aside from just skinning the opposing players, you would of course also need their entrails for thread. You could probably use their hairs instead, but that would be too easy of course.
Maybe I should have closed my previous post with "/end sarcasm...
On 2 side notes though, Worgen NPCs (like the Terrowulves in Ashenvale for instance) ARE in fact skinnable.
And you're talking about a potent negative social stigma, try the Undead Racial: Cannibalize.
