Talents and stats are getting completely changed in Cata, so there's absolutely no way to give you advice on those just yet. Wait until ~2 weeks before Cata's release, when there's more info available, to ask these sorts of questions.
I thought all they were doing was adding 5 more talent points. That they weren't revamping everything

There is no way, other than the ptr to know exactly what they have in mind, though I would imagine that it will be somewhat more than "adding 5 talent points" and less than rewriting the whole game. It is quite likely that they will chance some talents between then and now, and even more likely that the new end game talents and talent tree changes will significantly change most things. Not to mention the completely new profession and way to buff your character.
What I can assume, based on the progression of ToC, ICC and so on, is that end game content will be a LOT farther off the scale than people think. If you look at the multiplicative effect of scaling through levels 1-60, then 60-70 and then 70-80, the steps are all like night and day. Level 60 Outlands greens stomp level 60 vanilla purples into paste. Much the same can be said for Northrend over Outlands. Based on the results of TOC and ICC gear coming out and the resulting scale issues, I am willing to bet that if you don't have top end gear, then Catacylism is going to be very difficult.
