So I've been playing ret for a long time now, it seems like we rely heavily on crits in PvP and PvE to do good damage.
But I see all top ret's stacking Strength, having about 29-33% crit chance, and this seems really low.
I've tried a mix of gear for PvP and PvE, generally higher crit seems to be doing more damage than the AP equivilant.
For me I've found 35-40% crit chance in PvP is great for burst, even on healers with 1000 resi, if I go any lower, my burst is not as 'scary', and my arena setups rely on me to be doing a lot of damage.
What do you guys think, crit or AP?
And for the record I'm doing arena with 600-750 resi usually.

First off, no top ret would stack AP, they would be stacking strength.
Also, many pallys are doing arena in Protribution, most of the top pallys on my server are trying it out now due to so many people in arena are using it.
What you maybe seeing are people in Protribution that you are assuming are in retribution spec.
Most arena teams are built around burst damage, as most people in 2v2 (I am assuming that is what you are doing) are in cleave teams. Crit is great, but as you get in the upper ratings, people are in far more resil. gear. Due to this much large amount of resil, so you will have a smaller chance to crit. So most people in the upper ratings trade strength over crit due to it being certain that they will be able to do damage, rather than hedge a bet that they will be getting crits.

When I say AP, I mean strength because they amount to the same thing, which is AP.
I understand why they take strength over crit, and I am playing in the higher ratings, haven't done much 3v3 recently because we wanted to hit 1800 for the weapons, now we're going to work on the rating, but in 2's we often face 2.2k rated teams and healers with 1000+ resillience, if I go for crit I am still critting them often and my burst seems much higher.

If your 3's team has a healer, then I wouldn't worry about stacking crit, since you should be recieving heals and Exorcism has a 15 second CD. Not getting the Art of War prot shouldn't be something you will be dying over with a healer.
If your in a cleave team in 2v2 or 3v3, then you will want all the burst you can get. I am a personal fan of the idea of Protribution, since I have heard that it gives a significant increase in burst. Crit will definately increase your burst, but you are heavily making a bet that you will crit a lot in the opening of the fight, a risk that most people don't like to take.
Besides all that, Crit is hard to stack, as gemming for it gives you a smaller stat weight increase. Gemming strength will give you more overall, I personally would only take the crit you get from gear.
Finally, stacking strength gives you
BIGGER CRITS
. You may crit less, but those crits will hurt more. Combined with you doing more damage that you can rely on, I find stacking strength>crit.

I am not gemming for it at all, I'm equipping PvE pieces with heavy crit chance on them, with WG crit trinket, battlemaster crit trinket I can get 26k hp, 650 resi, 40% crit, 4200 AP unbuffed in my PvP gear, seems to be working very well.
