I'll try to shed some light for you, as I only recently hit 80.
Like Gorefiend stated above, stats really don't mean a whole lot until 80. I farmed and bought every enchant/gem piece I could trying to stay above the curve while leveling 70-79. I focused on INT over Spirit primary because when I ran 5-mans it was about healing through a terrible tank, or having to make up for the DPS people who died.
mp5 meant little to me simply because mobs in Northrend seem to drop food/water quite often, and Innervate is just plain sexy.
When I dinged 80, I was able to find very cheap blues on the AH with stats that made my questing gear look like grey's.
My advice to you, as you hit the mid and upper 70's, start running Wintergrasps, and do the Argent Tourney if you have the time. Not only will this give you easy gold on a constant basis, but it will earn you seals you can use to buy other gear as well. I'm not sure what your overall goal is once you hit 80 (raids, PvP, chilling ) but you can't beat free gear, period.
When I hit 80, in ToL I had 1200sp and around 12.8k mana. I was able to easily heal/Dps through non heroic 80's as well as Reg-ToC without much problem.
TL,DR: 70-79 stats will take care of themselves from quest gear. At 80, spend that cash. :)

My comments on INT over Spirit were relating to the 70-79 range. I will agree that Spirit a primary focus @ 80, but it seems while leveling, INT just seemed easier to come by, and gave a better return while leveling. Regen is nice, but popping food/drinks usually gets you capped within a few seconds.
I'm not trying to confuse anyone, my personal experience just pointed me towards an INT build as I leveled. The 5-mans comment was in reference to the normal dungeons you would do along the way to 80.
