Geared prot warriors surprisingly can dish out some good DPS with crits here and there. However I wouldn't use the duel you had as a good example of situations you'll be in during PVP or Arena. Prot warriors in Arena are obviously going to get rocked and that's why you will never seen them there (unless the team is below 1500).
I play a resto shammy in arena wearing some Savage Gladiator gear sitting at about 19k HP unbuffed. My gear is no where near perfect for PVP, but it all depends on how well your synergy is with your teammate. We have a +1735 rating, and most of the time our comps severly overgear us. Good communication and CC will get you along your way.
We are very new to arena. My partner and I have never done arena pre-Wotlk, meaning we don't know much about strategies. We're still learning, and that's the key to arena. I'll give you some examples of comps we usually win/lose to, but by no means should you use this as a solid arena strategy. (If you look at my armory I dont' even have the spec for arena)
It's interesting because we usually destroy Holy/Survival comps in a matter of seconds (I know i'm going to get flamed for this, because all those holy/survival players are probably saying we own you and you played against a newb comp). We pop Heroism and Avenging Wrath and stay on the hunter, and usually the Holy-pally doesn't even know what's coming. The best way to win against survival hunters is to have your DPS stay on him/her and for you to LOS-kite the hunter. Most of the time keeping earth-shield and riptide on the paladin will keep him at full hp. If the hunter switches onto the Ret pally, have him Hand of Freedom and just stay on the hunter as much as possible. With ret having lots of burst damage, the holy-pally will have to spend much of the time keeping the hunter up.
My partner (ret pally) and I played a Furywarr/Resto-sham comp and lost 3 times in a row. This comp also had a major advantage in gear, since they were well into 25man naxx. The Warrior literally just used hamstring and swung his weapons to kill me, and I couldn't even keep up healing myself. There are some strategies I would use for next time, but I don't feel the need to write them out here.
Like one of the previous posters said, your role is to keep your team alive, while your teammate's role is to keep their team dead.
EDIT: Oh and another thing, counterkills RARELY ever happen in arena, but if the situation calls for it, then obviously survivability is the key to winning.

Get 800 resilience at least, then fighting people won't be as ridiculously painful.

Resilience is your friend. Outside of Valorous Geared dps, you won't die without at least three on you popping their cooldowns heavily. If you have basic savage gladiator gear with the purple honor grind items, you're pretty much set for a while.
