Well, we don't know exactly what the Light is, nor what conditions have to be met in order to obtain it's power. As seen with Blood Knights, a virtuous and just demeanor is not a prequisite.
We also know that spiritual (or perhaps simply physical) corruption can sever existing ties with and remove any possibility of wielding the Light (ie: Forsaken and Broken).
As for why Tauren would suddenly become knights, years of observation of the Human and Dwarf Paladins and the relatively new Draenei and Blood Elf equivalents would lead to emulation of what a Paladin (or a Wielder of the Light in general) is percieved to be by races that have much more extensive knowledge and experience with it's power.
It's pretty much a case of: Their Paladins wear heavy armor and swing big weapons, so our Paladins will do the same.

This is what the Tauren decided to do after their first batch of Leather wearing paladin all died in the first BG they entered.

Lol. It's more like Tauren needed a new class and a primary caster class so they got (priest/Paladin).
Besides it's cool to see Tauren Palles now. Their the race that ganks me the least. :)
Tauren were my favorite race ever since warcraft 3, i felt they were the only race that did what they did for honorable reasons.

Of all the races of the horde, the Tauren are the only ones who found a natural affinity with the light, being they have never dealed in or been corrupted by some form or another.
But the blood elves have proven something in there blood knights that came in TBC. They proved that well before the alliance assumed the methods of the holy light came from just them worshiping these beliefs and it gifted them with this holy light, the blood elves found the holy light was infact a magical force they could wield, not just its belief, and used there magics to do so.
Now with the tauren, this is different, but it made a point in regards to the holy light. Regardless of how its obtained, the power of holy can come under someones control through shear force of will, very much the same way the power of the elements comes under a shaman or druids force of will.
However, it appear the power of holy light is far more fickle then the power of nature, and only if someone is thought of as 'uncorrupt' does someone get to control it.
However this doesn't give an answer to why then trolls, undead and gnomes (tee hee) can become priests, and wield the holy light. I know with undead it can be dismissed as them all being shadow priests, but still.

I think the best way to put it is that Tauren Paladin are basically just another form of Druid. It was mentioned somewhere that they believe that the nightelf way of worship was flawed, in that they only worship the moon. The Tauren decided it wasn't right and now also worship the sun, what they believe to be the two eyes of their deity.
I forget exactly what they are being called (Sunwalkers or something like that) but they aren't really Paladins. Paladin is just the class name and set of skills being used to give the character playability in the MMO game setting. But they aren't really Paladins. The same way Blood Elves are not Paladins, they are Blood Knights, that use Paladin as a template so that Blizzard doesn't have to make an entirely new class.

Trolls invoke the Light by means of voodoo style rituals and incantations.
Gnomes use a more logical method to wield the Light, but how they do it hasn't been revealed yet.
Undead don't and can't wield the Light, so as you said, they use the Shadow instead.
I've always thought the biggest difference between priests' and paladins' use of the Light is the method they use and their reason to call upon it's power. As you can guess, priests typically call upon it by prayer to heal and bless, while paladins typically call upon it by force of will to protect their allies and defeat the unholy.
Tauren already worship the elements and the land, and they probably view the Light as another blessing of the Earthmother. That's why you won't see Tauren priests, because they don't worship the Light, just as they don't worship the elements. They simply wield and respect it's power.
But those are just my thoughts.

You completely disagree with this? Did you read the reasons why it would make sense or did your ignorance prevent you from reading other people's opinions and thoughts and trying,

Change scares some people. Regardless of the theoretical or factual evidence provided, there are those who will disagree simply because it's different.
It doesn't make their disagreement valid, or even logical - but then again, logic rarely plays into fear.
