In my opinion Maybe Jewelcrafting and Enchanting would be the best. Atleast enchanting.
Getting to enchant your rings is just simply awesome.
Jewelcrafting means you get awesome gems.
(saying this i have neither -.- have been considering switching proffs though)
Tailoring is simply awfull in my opinion(compared to the others), since you loose the penetrationenchant on your cloak for tailorenchant. Meaning you have to socket more penetration to be "capped"
(I'm a tailor-.-)
Every proffesion is capable, but I think those are the best for discpvp.
Leatherworking got the awesome stam on bracers enchant,
cant remember what blacksmithing have but think its extra sockets for 2 items (which is awesome)
engineers got some cool trinkets and "enchants"

Professions are just a minor fine tuner. If you are at the very top and just wanna hit the ceiling sure, you'd wanna consider the "perfect proffs" but I doubt anybody would really wanna bother with anything. I myself would always opt to get engineering for the simple uses and coolness it has to it.
Otherwise, what really matters would be your gear and spec. Proffs are proffs in the end, not direct combat boosters.
