If you drop mining & keep blacksmithing you will inevitably have to work your ass off in order to "buy everything". It's not exactly hard to farm the materials, so I would recommend keeping the mining. Especially since Outland has only a few types of ore & you can start gathering it rather early. The first zone in Outland alone can take you incredibly far (that is, very close to 350; I forgot how high Fel Iron can level up).
The question you have to answer yourself is this:
Do I want to keep blacksmithing which covers all areas of plate or do I just want those sweet goggles from Engineering?
If you don't have another character you play often for farming the materials to level blacksmithing & engineering then I recommend against dropping mining. It's that simple.
As far as blacksmithing goes...they did really well in Outland with recipes, etc. at the high end. For casual / non-raiding players, these recipes are incredible & it took so very long before they even started to fade in worth. I predict they will do the same thing for crafting professions like this in the next expansion. For this reason, I myself am not dropping mining - it will be hard to level up your warriors profession if you have to level an "alt" because you don't have mining. This can really put you behind on your warrior's objectives.

I picked BS for the chest piece because a good dps chest was hard to find and I wcould use it forever. In Karazan you can get 2 good helmets and a lot of different good weapons.
I don't PvP so I am anti PvP gear in raids because it might look better, but it is made for a PvP spec and not PvE. Maybe that is only for warriors. No +hit dual wielding is bad, and you can't get any tanking gear from PvP. The shield has nothing good to it for PvE tanking either.

Why nobody suggest Enchanting and JC?
Enchanters can do +4 all stats rings so thats mean +8 more stat
Jewelcrafters can do speaciel gems like htp://
