You can only have 2 professions on one character. I have enchanting and tailoring on my main and I'm trying to get a DK to 65 so I can get inscription on it.

I have 10 Alliance toons on one server. My eventual goal is to get them all to 80, have every crafting profession only once (with 1 or 2 exceptions) and the rest filled with gathering professions, and all of them with dual-spec and epic flight. So far I have one 80, one 75, two in their 60's, and the rest from 20 to 40. I'll be able to run with groups and pvp with any of them and will have all the recipes for every profession. I'm not a hardcore raider so I'm not worried about the min/max benefits of each prof for the class it's on, but I'm not giving stuff like BS or LW to a clothie either.
I personally wish that we could have 3 professions per toon with a max of 2 of those being crafting thus forcing the 3rd to be gathering if you chose to take advantage of it, but that's not what Blizzard wants atm. Oh, and 12 toons per server instead of 10 would be nice as well.

@Adent: You didnt get what the OP said.
@OP: Because there is not many people who are able and/or the willing to level up multiple toons (which I think it is your case and the reason of this post). If they would allow 1 character to have all profession, it would just make everybody to have them all and just make any crafted items to worth nothing and every non-gathered material to cost a @#$% tons more. It would just be not profitable anymore. There would be no purpose to have profession except for the profession stat bonus, but at that point, just give it to everybody and make profession items to be sold by NPC.
