Alrighty... here's what I want to do.
I am 450 Mining/JC right now. As an achievement glutton, I want to get the 100 mounts achievement, but am somewhat limited in the time department - so I don't get hours and hours to farm all the lovely rare drop mounts. This being said, I thought about dropping one of my professions -
temporarily
- for first Tailoring, then Engineering, so I can learn the 4 (?) mounts from there. And then just drop Engineering and re-learn my original profession. Bottom line - is that possible?
The procedure I am planning to follow is something like:
Drop JC
Learn Tailoring (1/450)
Level Tailoring to 425/450
Craft the two carpets and learn them.
Drop Tailoring, learn Engineering (1/450)
Level Engineering to 375/450
Craft the two flying machines and learn them
Drop Engineering and take JC again
JC is going to be back at 450/450, with all of my rare cuts I bought, right?

If I'm not mistaken, you lose your skill level when you drop a profession. Not sure what happens to the recipes.
From Blizzards FAQ: "You can relearn the initial profession if you wish, but your skill level in that profession will be reset to zero"

Why would you drop JC instead of mining?
You will lose all the cuts you learned, epics one too.

I believe you'll have to re-level JC from very beginning, but I don't know what happens to vendor-bought recipes when you drop and re-level a profession.
Have you considered dropping Mining instead of JC? It is a bit of a grind to level it back up, but there are no recipes to worry about and you don't have to worry about RNG.

I'd have to agree with this.
Drop your mining. You can either buy your mats or farm on an alt to get them.
Either decision seems wiser than losing your recipes for JC.

If you have time to grind two professions, you have time to grind rep with Maghar, Netherwing, Shatari Skyguard, etc. That's more than 4 mounts there.
If you are determined to do this, I would absolutely NOT advise you to drop JC.
I think a more effective method would be:
Farm mining mats needed to level engineering. Drop mining.
Level engineering to 375, craft mounts, learn.
Drop Engineering, if you haven't gotten hooked on all the fun stuff :P and the amazing convenience of the Dal AH.
Take tailoring, grind it up to 425, craft carpets, learn.
Or of course you could gather eng mats, do tailoring *first* then do eng, and keep it along with JC to have a fun prof along with a very profitable one.
If you unlearn JC you will lose all JC cuts you have learned, probably all JC tokens earned as well. Then you have the monumental cost of re-grinding it all the way back to 450. Ouch.
If you absolutely MUST have mining, re-learning it will not be nearly as painful and costly as it would be to re-acquire all the JC epic patterns.

Done that long time ago, my dear man :) I am at 87/100 mounts, and I know I have 4-5 more from the Argent Tournament (the 100 Seals ones). I assume I could buy a Chopper, Traveler's Mammoth, and the Sons of Hodir 8k Mammoth... With a few PvP mounts, I could hit 100... but it's a long process, and I cherish my savings :S

Well, if you had the inclination, you could do as I suggested and do taloring first, take eng up to 450, and craft your own chopper. I know "waste of money" blah blah blah... but I have fun with it, and I give my kids a thrill by taking their low level toons on joyrides. So... a few yellow pixels traded for children's laughter. Yep, worth it ;-)

If you cherish your savings, wouldn't it hurt to spend the money power levelling then dropping it to powerlevel something else? Better spending the money on the mounts you can buy whilst making some money without changing your existing professions, in my opinion of course :)

Hard to say. I am very close to getting a Rusted Proto-drake (need Yogg +1 only, and that's relatively easy after Firefighter), and I very much like the way it looks. The Sunreavers Dragonhawk is also a gorgeous mount. My Thalassian Charger and Argent Charger are definitely close to the top, as I am a Light junkie. The White War Talbuk is also nice, and so is the... Onyx Nether Drake. I think it was the Onyx one.
Those are the ones I can think of right now.
On topic, dropping Mining does indeed seem like the better choice. I was planning to drop JC because I believe my skill level and designs will remain the same when I re-take it - so sticking with Mining, to facilitate my Engineering leveling made sense. Now I'll just have to farm the mats beforehand, or my Hunter who is also a Miner.

If you drop JC you lose ALL your patterns. Don't do it.
