My gf has a disc priest. Recently as she has been healing instances she has been asked a lot if she can heal instances after she says that she is disc. Because of this she has been thinking about switching to Holy spec. Why do people think Holy is the only healing spec? She also had someone say that Disc isn't a healing spec but a buff spec.
Is it that people are just ill-informed or just completely ignorant?
(As disc she healed UK at level 65 with no 80s in the group)

Discipline is widely accepted as the PvP healing spec, and Holy the PvE. There's nothing wrong with Discipline for healing, but Holy has talents that are better suited for instances.
This
is the "cookie cutter" Holy spec.

A little of both. It used to be purely PvP survival.
Discipline has been a viable PVE healing spec since 3.0 (err... *cough* 3.0.2 *cough*)
To pigeonhole Disc to "the PvP spec" and Holy to "the PvE spec" would be foolish. They're just 2 different styles of healing — Discipline being more apt at preventing damage and quick, single-target heals; Holy being about raw throughput with bigger, slightly slower heals and more AoE options.
Some people just don't realize that Disc isn't just for PvP anymore (or that Holy can now hold it's own in PvP as well).

This should be proof enough that Disc is a great healing spec. Tell her not to lose heart, and to stick with Discipline if she likes it.
Edit:
To follow up a bit more, I switched from Holy to Discipline once 3.0.2 went live and I didn't switch back to Holy until my guild started Naxx25. Healing 5-mans and heroics between 70-80 and also leveling, I found it much easier and more fun as Discipline. The day I went back to Holy was indeed a sad one. Luckily, I only had to stay Holy for the first 2 or 3 weeks of raiding until I convinced our raid leader to let me switch back to Discipline.
