Lumberjack: Able to chop done trees in order to harvest various types of wood. Types of lumber would range from standard oak to mystical ironwood, harvested in Crystalsong.
Woodworker: Able to use various types of wood to create a number of items:
Staves
Bows
Crossbows
Off-hand items
Enhanced limbs for bows (like scopes but increases range and attack power)
Enhanced stocks for firearms (decreases cooldown on all ranged attacks)
Relics of various types (Totems for Shamans, Idols for Druids)
Fishing poles
Musical instruments (for entertainment purposes only)
Furniture for guild housing

Well, although it may be hard to program, it may be possible to implement this. After all, like oldiron79 mentioned, Staves, Bows and Crossbows are the only weapons which cannot be made with professions at the moment. I'm quite sure that a lot of casters, Hunters, or maybe even some other classes would like to see these professions in-game for this reason.
And about guild housing? Well, if people just whine about it enough, I'm pretty sure it'll be implemented one day. I don't know if Woodworking should be used to create furniture for it, though. Just buying upgrades for it (like an Auction House, Target Dummies, Class/Professions Trainers, etc.) should be sufficient.
I mean, they added guild banking because people wanted it so bad, so I can see it happening with guild housing.

I have been thinking of this too, there are lumberjack places already in Azeroth, so it could work.

I like the idea, but mostly because of the first warcraft i used to play in the day... you know the one.... "Stop Poking Me!"
We gathered lumber then, why not now.
As for buildings. No. many people i know like to go into one of the Many buildings currently in the world(s) and log out there. Not just inns, but any of the houses. all they would do is add bank access to each of the buildings, and you would have a "house"
But imagine adding 2500 New Buildings in the world(s).
the place would be Way over crowded.

I think a possible new profession could be Minstrel. You skill up by learning new songs and different instruments. You make money by singing for people until they give you gold to STFU and go away.
"Oh he's the brave Sir Robin...."
That would give WoW a certain realism...
