Played every class except the Priest, now is the time to try...

Priest specs aren't as cookie cutter as other classes, at least when you get into the healing aspect of it. Early on you might get a little frustrated at being squishy, mostly because lowbie tanks can't really hold aggro (or don't know how to)
I went holy (with a litlte bit of disc - just enough to get inner focus and the regen talent) at 10 and stayed that way until 80, so dont believe any rumors that you HAVE to be holy to grind quests/levels. Its not difficult as a healer. I always made sure I was in LFG at all times, working on quests while waiting for group invites.
Early levels I found it helpful to load up on int (spellpower a close second) then switch over to spellpower heavy once I hit that 70+ mark and those items became more available. You really wont have an OOM problem once you hit northrend, our mana regen is just too high. Which is partially why spirit is getting a nerf, but with the buff to the regen talent it equals out to being roughly the same amount of mp5 post patch.
As far as what to cast, renew and flash heal are your new best friends. Greater doesn't get used as often at the higher levels, but you'll use it more frequently in the mid level range.
DONT BUBBLE TANKS. All you'll do with that is annoy them and kill their rage gain. Also, renew AFTER the fight starts, if the tank charges in with a renew on, aggro is going to bounce to you quickly. Especially if its a multi-mob pull.
First of all, I can't believe you would wait to play a priest until last! Saving the best for last does NOT go for WoW toons... :0
You asked quite a bit there and most of it you could already get awnsered if you were willing to read through about 4 hours of forums...so I'll try and consolodate it for you. I will be having you get your duel spec around level 60, assuming by then it's out. With that many toons, I'm hoping you'll be able to spare 1000g.
Disc specializes in single target healing and is ideal for MT
Holy specializes in AoE healing
Shadow specializes in dps
Talents for leveling
No talent seems to be very good for leveling until later in the talent tree, but here's what I prefer (I'm including rough builds, but you can change it to suit your preference and for patch 3.1):
1-39, level as
and get used to the way they heal. That includes using your shield even though it won't be very effective until now (hold off on using them if it will oom you). Disc uses Penance and shields formost with Flash Heals inbetween. Any other heals we have can be used, but those are our 3 main spells. This early in, all you'll have is your shield and Flash Heal. For dps, your wand is your friend.
40-59, level as
. By this time you will have shadowform and your strongest dps will come out of shadow. You will also still be able to heal anything in Azeroth no problem.
60-68, level as
and get used to the way they heal. Most of your healing here will simply by renew and Greater Heal as your AoE heals won't be necessary yet. If possible, take up shadow for soloing at this time and change your holy spec to compensate for no dps output.
69-80, once again solo as shadow, but for grouping, group as whatever spec you prefer to raid as.
Stats to shoot for (sp is always the best stat)
sp, int, crit, mp5
sp, spirit, haste
sp, spirit, haste/crit
Your mana regen doesn't get very good until later levels, but even with the spirit nerf and the Rapture nerf, your regen should still be fine.
Spriests have are some of the top DPSers on the charts while still
(add up to 67% more healing through talents) their party some and offering
Holy Priests are one of the best AoE healers in the game, especially where in patch 3.1 PoH is going to be a raid accessable heal.
Discipline Priests are one of the best MT healers in the game, having FHeal (similar to a pallies SoL), Penance (a quick heal that I believe is the most powerful in the game), and shields reaching 6k+ absorption damage.
I know you asked some other stuff, but I'll let others awnser it, unless I get back on before then. But this post is already long enough, I'm tired, and it's 4:40 am here.
read the discipline guide link on my signature it helps alot if you plan on disc..btw i know its not recommended but if you wanna be a truly skilled priest healer or dps lvl as that spec all the way that's what i did to lvl just heal tons i think its worth it when you hit the harder stuff it will be that much easier cuz you already have a ton of experience:) idk it saves alot of work/practice at your spec.
btw priests are awesome!
DONT BUBBLE TANKS.
Ignore this advice. It is changing in 3.1 and its not really an issue to begin with. It's a stigma in place from before patch 3.0 when tanks were often rage starved and anything making the situation worse @#$%ed them off. Post 3.0 it hasn't been a problem for tanks to generate rage and hold aggro.
