Most of the professions are viable for any class. As a paladin, yuo would received direct benefit from mining/blacksmithing, mining/engineering, enchanting or herbalism/alchemy. leatherworking and tailor might be useless to you, although you could do mining/skinning for selling goods on the auction house.

I think how your planning on playing your pally will also help determine what professions you select. As prot I'm not seeing a whole heck of a lot of plate items that I could make as a BS that don't require a ridiculous amount of mats. There are plenty of Heroic / 10man raid drops, badge rewards, etc, that would rival or best the crafted items. I had thought of Herb/Alch. Being able to make pots cheap and the Alchemist's Stone is very popular until you get some of the more defense specific trinkets.
At level 20 think about grabbing 2 gathering professions. Herb/Skinning/Mining. Sell what you gather and save as much gold as you can. When you get into your 60's pick what interests you most and level it up.
My Skinning/Mining 61 Pally has is sitting on 500+ gold after buying my epic ground mount.
