For healing, either is great. If you want to have the option of tanking without rolling a new character, stick with the Paladin, otherwise the choice is entirely yours.
Honestly, you'll have to dedicated time to farming outside of queuing at most level ranges because the queue for a healer is so short. As for the perks, the bonuses from the gathering professions are nice, but not really worth considering when choosing your professions. The maximum bonus crit bonus from Skinning is only 80 crit. There are
81 greens
with more crit than that.

If you're interested in farming but then you still want to have a good bonus from a profession at max level, you could consider dropping the gathering professions and switching to something else... assuming you don't want to farm anymore at the max level.

I cannot give my opinion as to whether or not a priest is a more interesting play style than a paladin because my paladin is only 51, but I played a disc priest throughout Wrath and into Cata, so I can help answer your questions regarding them.
Penance is a discipline talent that heals friendly targets or damages unfriendly targets, depending on who you have selected. It's a core healing spell for disc.
Leap of Faith (aka "Life Grip") is a spell that all priests get at 85. It pulls a friendly target to you, basically the opposite of a DK's Death Grip. It's a nifty utility spell if someone is where they shouldn't be and you need to get them out of some bad stuff quickly.
Healing in general is a lot of fun. Each healing class has its own strengths and weaknesses, but I find them all to be equally "interesting". So I would say if you like your pally so far, and find it to be the most interesting, then go for it. (c:
