If the 2nd drake lands then you've already kind of failed on the whole zerg concept. Sarth needs to be dead in under 80 seconds or the zerg will be of the GY.
Also if you consider that the fight only lasts 75 seconds and you have Bloodlust or Heroism up for 50%+ of the fight, 7k dps really shouldn't be that hard to manage - if it is you aren't geared for the zerg.

I'd say each DPS requries atleast 4.5k DPS minimum. We we're trying this for about half an hour tonight and gave up in the end, due to our healer being un-able to cope. He is only 2 pieces of valor tier 8, and it's his first time here, didn't expect wonders tbh.
Even with all our dps doing minimum 4.5k ranging to 5.1k, we would ALWAYS get him to 15% with 20-30 seconds before second drake lands. Our healer was just finding it way to hard to cope with raid healing and MT healing.
Oh well.

You have to kill Sarth before the 3rd drake lands. Sarth goes immune at that point and its a wipe.
You have to kill Sarth before the 2nd Drake, not the 3rd, comes down. Shadron (the one on the right when you enter the instance) is the one that comes down 2nd at 75 seconds into the fight. He's the one that puts up the immunity shield.
3. Your tank is going to have to be able to out threat your DPS'ers who are going to be going absolute balls to the walls right off the bat. If the tank cannot hold threat against the DPS'ers its not going to work.
I guess the timing for popping heroism would be a balance between tank initial threat, maximum number of DPSers (i.e. before the druid kites), and yet late enough so that you can get some DPS during the burn phase (<35%, when a lot of classes start getting increased damage "execute" abilities).

We generally pop Bloodlust during/after (depending on which side it comes from) the first flame wall, to have it end around when Sartharion dies and not lose some of it to movement. Did it recently with a mixed caster/melee group, people ranging from 4k5 to 5k5, paladin healer, druid tank, I was the moonkin kiter.
The fight has to be finished before ~80s because Sarth becomes immune (bubbled) shortly after the 2nd drakes lands. This sets the dps requirements (you have to burn him down in 80s or less) and tanking requirements :
- first drake lands and has to be tanked by the MT.
- whelps + fire elementals are tanked by healer, MT or aoe dps
- Sartharion enrages the drakes when below 25%, you can either hope for luck and keep him on the tank or kite Tenebron. The 2nd drake does not need to be kited as the fight will have to be finished before he can hit the MT or whoever.
Kiting is easy for any druid, just get some distance, hit growl, feral faerie fire, cat form and dash and run away, you shouldn't get hit even once. Just pay attention to fire walls and do it before the enrage (but do the max dps you can in the meantime).
I simply rearranged my keybinds for that fight so that i could simply hit a sequence of buttons whitout having to think (ie for the bear bar growl on 1, FFF on 2 and cat on 3, cat bar dash on 4)
