So Im playing a warrior with this build:

Mostly doing PVE but I eventually plan to do some PvP. Feel free to comment on the build but my real query is this:
Ive been thinking about what equipment I want to get, and considering how much time and effort I want to put into it. The answer to the time and effort bit is however much it takes, so Ive decided to go the distance.
Im going to try and get this armor set:

With my build I was wondering a few things, mainly how I should gem/enchant the armor, but also equipment I should put in my other slots (and enchants/gems thereof).
Ive pretty much settled on this enchant (

) for my weapon, but advice there is also welcome.
This is my first character, and Im aware at how high Im shooting so please dont reply with discouraging comments. I got enough of that over on Blizz's official forums.

You mentioned you do mostly PVE, but you do plan on PVP. Your pvp gear will come from Battlegrounds and/or Arena, so that aside, you're going to either DPS or Tank in a PVE environment (though you can sometimes find yourself doing the job of the other role from which you specialize).
Know this: most warriors, with the exception of those who tank for a living, still respec their talents to Protection for the purpose of obtaining new gear. This is most prevalent at max level to "gear up" and get a tank suit, regardless of whether they intend to stay Protection or go pvp. Some do pick a side, but let's just be non-biased, =P
You appear to want raiding epics for damage dealing, but to get these will require one of two things: a) you spec Protection and earn these pieces of armor the hard way, or b) you stay MS Arms and deal damage in place of rogues, etc. in your guilds' raids. The option is up to you.
Gems, enchants, they can vary depending on your gear/spec: for tanking you'll want Stars of Elune for stamina gems, etc. (blue) but for dealing damage you may pick other types, such as red. Do some research to find out later on what your style or preference will be.
There's nothing wrong with dreaming, just don't forget that if you want the results, you must put forth the effort. Sometimes, as a warrior (and yes yes other chars too -_-), you must make sacrifices to obtain that which you desire. There's more to life than just wacking at rogues, you can wack Archimonde if you put your head to it (and likely will have to, if you want Cat's Edge =).
The last thing I will say is that a warrior is like a grand piano; it's very out of tune and will take a lot of time and a keen ear if you want to finish the job. Good luck!

Thanks for the response! Like I said, I know that I have a long hard road ahead of me, but thats why Im here. With a concrete plan the road gets that much shorter.
The bulk of question remains though. Going with the Tier 6 gear and Cat's Edge, what are the best gems/enchants/other equips for my character? Arms DPS is the name of the game here.
To help make the question more specific...
Should I be shooting for a certain ammount of +hit? +crit? Other stuff?

If you plan to PvP you would be wise to max out improved intercept and consider second win. Surely you know how much people like to root/stun us warriors? The extra rage you get from second wind is amazing!

I concluded you plan on using 2H weapons majority of the time, since your goal is a 2H, etc. For 2H weapons you will want at least 5% to hit (or approximately 79 hit rating).
You should aim for high strength, which inherently recommends attack power. Unless my memory fails me, 1 STR translates to 2 AP (don't think they changed this? confirm anyone?). You'll gain Critical chance along the way, including Poleaxe spec based on your weapon maybe or even Zerker stance.
I'm no expert on PVE dps vs PVP intricacies concerning talent builds, but I can direct you in the right general direction. You want sustained damage in PVE normally and burst damage in PVP. This will decide which talents for what path you choose to take.
Like Garner said, Intercept is a widely useful talent in PVP, where you're likely to be in-combat (think: Arena - all battle, all the time) and can't use Charge. Second Wind is a talent that helps heal you and give rage as well; the talent may sound less than effective, but I assure you it is a great talent.
As far as what you pick for the last few talent points, it can become a large debate over things like Imp. Slam, Second Wind, filling out Flurry, even Imp. Execute in a way (this could be potentially powerful with Sweeping Strikes). I would have to be in-game and playing to really give a well-thought answer on this.

I agree Imp Intercept and Second Wind are great talents, Ive been stuggling with the question of whether to give up 2 points of flurry to get second wind. As well, whether to give up 1 point of Imp Overpower for the second point of Imp Intercept.

Like he said, interccept is for PvP, but if you do both then I would get rid of overpower. Flurry is really nice to have since 25% speed means 25% more damage. That amount of damage is hard to replace. It isn't burst damage, but is more which is what you would need for PvE.

Choose if u wanna go Poleaxe, Sword, Mace specialization.
Flurry is ok, not a must in PVP. Your target move around too much and most of the time your charges goes to waste because you get the "out of range" thingy. Although it's good in PVE. Another thing is that there's player with high resilence when you get to the 1800 rating players that is decked with Arena gears, that makes it hard to get crits to trigger it.
Your bread and butter is your MS. Everything else just helps you to get you to land as much MS as you can LOL.
Overpower is your anti-rogue man skill! Never go without it.
Imp hammy, chance to immobilize your target is a must so you can land that MS.
2nd Wind, you're gonna get stunned ALL the time so that extra health and rage is awesome.
Some players dont like booming voice, some do. You can decide if you wanna put that in demoralizing shout or somewhere else instead.
Tatical Mastery is a no brainer. Good PVP warriors switches between battle and berserker stance.
This build is not really recommended for PVE warriors but for PVP Arena. And plus, most raids and groups rather take a Prot Warrior. 2H MS warrior are usually alienated in heroics dungeons and raids hehe.

If you want to be fairly competitive in PVP Arena and still dish a good amount of dps in PVE you can try the Slam DPS Warrior build 31/30.

Just make sure you follow the Autoswing/Slam/MS, Autoswing/Slam/WW, Autoswing/Slam cycle - oh and bring along that Shaman.
If you want top of the line epic gears, there's no way around it but to spend time doing it. Either dish it out in BGs for Honor Points and Tokens. Doing a bunch of heroics and hope that your group lets you loot them epic drops. Or grind it out in Arena. Just keep in mind that Arena gears gives mad resilence ratings.
Most people I know like Savagery enchant on their 2H.
