You'll know you're lacking when anything goes wrong.
If you're overgeared for the content you're in (you = plural, meaning you + your tank + your dps) then stack anything you want. Gem for attack power. It won't matter.
But if you're playing content at or slightly above your level (which IMO is the only place it's exciting) then you'll know when you're overallocating in the wrong direction, and need to regem to spellpower. (Which a lot of disc priests did since the last patch, btw.)
If you're stacking int just for fun -- which seems to be one thing that some disc priests do -- then have fun.
Edit
: I didn't mean to imply that stacking int is not a valid strategy when you're playing hard content. But again, you'll know whether it's mana or spellpower that's the main limiting factor.

Raid experience. Take Ulduar10man up untill Hodir. Im loaded with Mana after the boss is dead. Right now Im not seeing straight, or am I on the right track ?
Even in plain Naxx10 gear, with a 187 trinket, I was nearly full mana after every boss in Ulduar10. I think all it means is you're doing it right. ;)

My philosophy regarding sp vs int is fairly simple: my sp needs to grow in direct relation to my main tank's health bar to keep up with it, but beyond that I go for equal amounts of sp and intellect for max raid support. If your burst healing and crit procs from the standard tank rotations are sufficient to keep the tank alive, use the extra mana to toss shields, flashes, and PoH to assist with raid damage.
I'm the sole dedicated tank healer in my guild but 45-50% of my output is raid support on a consistent basis. I could stack sp all day day long and get some benefit (primarily overheals at my gear level), but a high amount of intellect (31k raid buffed) gives me the flexibility to significantly increase my overall output beyond the expectations of being just a tank healer.
You will want to be careful in how you gear and gem to achieve this though, since some encounters will require higher spell power while others benefit from max shield spams. I gem
int/sp hybrids
almost exclusively, and I use my trinket slots for versatility:
Throughput:
Illustration
Eye of the Broodmother
Int/Regen
Talisman of Resurgence
Spark of Hope
(I run with Broodmother and Talisman the majority of the time now)
I'll probably pick up
Solace of the Defeated
eventually (I passed on it this last week), but the mp5 on it seems redundant imo for disc. I'm dumping spirit/mp5 as fast as I'm able at this point. I'm down to 270 mp5 while casting and can actually afford to dump more.

This comment got me a bit curious, so I actually went to Wowprogress.com and looked up the top pve servers, then inspected all the disc priests on those servers. Quite a few gemmed straight sp, some gem crit or haste, but the majority it seems gem about equally for int and sp or stack int. And I noticed most of those that did gem primarily sp used some sort of int or regen trinket.
BUT THEN THERE'S THIS GUY
.
Amazing. I'll bet he can't wait for his four piece T9 bonus.

I agree with everything you wrote. Up until

I too am dumping spirit as much as possible. But I snagged Solace so fast my wrist still hurts. I'm still in love.
(My previous 2 go-to trinkets were also Dragon Soul and Broodmother; Solace has now replaced Dragon Soul.)
Correct my math, as I expect to be wrong here, or to be missing an essential ingredient.
1 int is really 1.265 after being churned thru Mental Strength and Blessing of Kings. This increases your mana pool by 18.975 -- ok, let's say 19 mana points per intellect. With Replenishment now giving 1% of your max mana every 5 seconds, those 19 mana points translate into 0.19mp5. (Just from Replenishment here, not counting Fiend or Hymn.)
Solace gives you a steady 128mp5 (at best, but let's start there). To achieve 128mp5 from intellect, given the math above, you'd need about 674 int. That's over 30 epic intellect gems. If you had 30 sockets and used them for intellect only, you'd of course be short on spellpower, as westrock acknowledged.
Also, in comparing Solace's mp5 with 674 int from gems or gear we can't limit ourselves to the regen. If you managed to find that 674 int somehow, you'd have 10k more in your starting mana pool, and you'd also have 4% more crit rating. But my point is that the impact Solace has on your effective mana pool is
enormous
. To approach that amount of effective mana you would need to jump through hoops. That are on fire. With stealthed rogues all around.
Word on the street is that the trinket is itemized too well, with its two tremendous "on-equip" bonuses. I agree. It's overbudgeted for its iLevel, and all we can do is pray they don't nerf it.

Serious crit-fiend. I love it. Personally I gem 2/3 runed, 1/3 potent, at least for now. I'm considering shifting more towards luminous (sp/int) as you've done turkey, but that will be driven by thirst, which I'm not experiencing in the least at the moment. Mana is a non-issue, but I'm overgeared for the content I'm in.
Also, that
trinket
...I'd bit all my DKP on that puppy. And not for the crit either.

I think my aversion to all things spirit/mp5 clouded my judgment on
Solace
. I'll be bidding on it next time it drops and either gem more sp or spam more raid heals to take advantage of it. Thanks for the heads up.

Nothing MATTERS just stack spell POWAAAA!
If nothing maters why stack spell power surely with such a philosophy it would be optimal to raid naked?
Anyway back on topic i too have fallen in love with int even more so this patch with my disc priest. I currently sit at (self buffed); 26kmana, 2227 sp, 28% holy crit, 356 haste and 692/396 mp5.
Imo my regen is too high and my crit not high enuf but tbh i make do. Im considering buying the emblm of triumph trinket to give me +236int from just 2 slots ( coupled with Pandora's Plea).
I normally heal MT with a pally if it requires and we have no trouble keeping up tanks thru most things

43.76 Holy UNBUFFED crit. Oh god. With a Druid aura and a couple of buffs, Arcane Intelect/Mark of the Wild and Kings included, as well as food and flasks, he can go weeell upwards 50% crit. I imagine a ohcrap button of Inner Focus Divine Hymn by that guy.... outch.

There are certain conditions by which I would pass on that trinket, one of which being that there was another well skilled healer in my guild who raided often enough with us and needed it more than I did... sure. But if we were all equally geared and the roll was open, ... I'd be all over that like a fat lady on a pizza.

There are certain conditions by which I would pass on that trinket, one of which being that there was a lightning strike during loot distribution that destroyed my computer along with all my worldly belongings, that also wiped my account from Blizzard's hard drives and all their backups. At that point I would begin the long drive to Irvine to discuss the matter with corporate, because that trinket belongs to me.
Fixed that for you.

LOL. Yeah that's what I meant to write. Really. Thanks for the correction Paolo!

Seeing that the trinket went for an enormous amount of dkp, I'm rather glad I didn't bid on it. I can hold out for the
25 man heroic version
.
