I'm not sure what level you are but if you plan on being boosted through everything then your build is down to personal preference. Fire has higher dps but lower survivability than frost. I've not specced to arcane so I wouldn't like to say how it plays. When I asked around what I should spec to, I was advised to go with fire till lvl60 or so then re-spec to frost. I'm lvl 66 now and I love my frost mage and wouldn't swap that spec for anything.
Ice barrier (esp if you get the glyph) will take a lot of pounding if you pull in an instance and usually you can blink away from danger till whoever's tanking can take aggro back. It's save my butt a few times so I'd be tempted to say frost.

At your level I'd go with fire. You'll get more burst damage and dps. I'd usually finish second after the tank in instances, which is good for getting invites to groups. The 'cookie cutter' fire talent build on this website is excellent if you want to see an example of what your spec might look like and why.
For questing and grinding I'd get the glyph of improved scorch then hit npc's with fireball, scorch, fireblast, which should knock a lot of their health off before they get close.

Starting at lvl 20 with blizzard, I never had trouble topping charts with my frost mage (even with fire mages in groups). My newest mage is only 60, but I've never been behind a fire mage, even in st, brd, scholo, strat, etc. That being said, just lvl however you want.
I wouldn't suggest going arcane until around 40....before that, arcane is only good at being mana-inefficient.
Since you are instancing, I'd suggest that you go fire or frost.

First mage I leveled, I was fire 1-60. The second mage I leveled was the same, the third mage has been fire 1-20, frost 20-72, arcane 72-78, frost 78-80. There are plenty of places to AOE grind if you want, leveling however gets much faster once you hit outland and start stacking spellpower, and you might decide that you just want to go "NUKE NUKE NUKE". :)
Blizzard to revisit the oldworld and add more spellpower gear for casters.

I know that mages use a Frost build for AoE purposes, but all guides on it always imply solo grinding.
So what spec do you think could suit my needs most?
Anythig playing with a ice aoe mage, will just slow him..joke :P
You can always have your wife running around, gather mobs and then you aoe all down, and have her backup heal you if you fail.
Get a dual spec for dungeons eventually (fire?)
don't really need a dual spec for dungeons while levelling.. frost does perfectly acceptable damage, especially at the lower levels.
actually, mages are one of the classes that require dual specs the least unless you do a lot of pvping.

There's quite a lot of lowbie gear w/ spell power. My mage got a fair bit of sp and that is w/o any twink gear. just crafted and ah gear.If you have to craft it, then it's not easy to get. And most AH gear is still below the norm of what is "okay" for a physical dps class.

I don't think levelling as arcane is viable until around level 46 when you get 2/2 Arcane Flows for
2 minute evocations

Up until that point, arcane is extremely mana heavy, but not impossible. 100% knockback reduction is nice if you're planning on tanking while your wife heals you. Arcane is definetely not an AoE spec; however you can get by once you get Arcane Power with a PoM Flamestrike into Frost Nova+AP'd Blizzard spam.
Of course, this is only possible at level 40 and above. QQ right?
Well, you'll get there pretty fast, I'm assuming you and your wife are going to use Refer-A-Friend right?
