Note that sometimes, like the last 1/3rd of the first boss in HoT, it is preferable to swap to Chakra:Sanctury for the extra aoe healing. In fact I tend to just sit in Sanc almost exclusively and rely on the extra power of Renew to make up for the reduced strength of Heal and other single target abilities.

What to fail on in TotT quick reference sheet:
+ Miniboss in the start?@#$ on the ground. ✓
+ First boss? &*!@ on the ground. ✓ Interrupts on boss. ✓ Interrupts on adds. ✓
+ Second boss? *!@# on the ground. ✓ Dispel enrages. ✓
+ Third boss? $%^& on the ground. ✓ Interrupts on boss / mind controlled. ✓ Stop damage during absorb. ✓
+ Last boss? ^&*! on the ground. ✓ Interrupts on adds. ✓
Since the people you had a problem keeping up are both 1) melee and 2) have short cooldown interrupts LFG system karma likely decided that it'd give you two prime specimens of humanity that managed to fail on every possible thing on the sheet, because ignoring boss mechanics to push yourself from 82% to 86% of the tank's single target damage is in fashion this season.
I know little of holy on account of not having played it regularly since Ulduar but it sounds like you were doing fine and any problems you had could be pinned on dps being awful. PoH is fairly expensive unless you get a good percentage effective healing out of it but if you don't have mana issues I don't see a problem with getting some extra HoTs rolling on the party if you know there's damage incoming.

Yup. PW: Shield doesn't really see much use with Holy. If you have points into Body and Soul, PW: Shield can turn into a situational tool for when you need to get that extra movement speed (like dodging Warmaster's shockwave).
Basically though, I spam Prayer of Mending on the tank (and I see you have it glyphed, good for you). For Heroics, I tend to use Chakra: Serenity because the tank should be taking most of the damage. Minor damage taken by others in the group can be offset by Renew or the glyphed Prayer of Healing (I use Renew if it's just one guy taking a little damage, and Prayer of Healing when the group is taking damage).
Keep in mind that the cooldown on Chakra allows us to switch relatively often. If you decide you need that aoe heal, then pop into Chakra: Sanctuary and etc.
Also keep in mind that with Holy, our Divine Hymn only has a 3 minute cooldown. In Heroics, Divine Hymn is like the failproof answer to healing heavy group damage (and fail tanks...). :3
