OK, after my nicely written post was lost due to getting a wowhead down error, here's a summary.
Daunting Handguards + Legplates = 159 DEF (74 more than you currently have)
Enchants = Back (16 DEF), Chest (22 DEF), Shield (20 DEF)
Socket belt (eternal belt buckle) = 16 DEF (You don't need epic gems since you will replace soon)
Level Blacksmithing for extra sockets = Hands (16 DEF), Wrist (16 DEF)
Level Mining for bonus Stamina.
More Enchants for more Stamina.
That's a total of +180 DEF which would bring you to 570 DEF. Plenty to tank TOC. And the extra Stam should give you at least 1k HP. Going with the cheaper gems, and farming the mats for the armor (26 saronite bars, 2 eternal earths) will keep the cost low. Even buying them shouldn't be bad since saronite is so cheap.

180 def rating is 36 def skill.
You need 665 (5mans are almost satan) def rating to do ToC 5 mans without being crit. You can do it with less but youll probably die if you get crit in there at a lower level unless you have a good healer.

Of course Quest is right. I feel bad for giving you such incorrect information. Still, the items and upgrades I recommended are good. I just checked my char with mywowarmory and it says I have 400 defense. So I can only go by looking at your gear. Adding up your items I get 467 def rating, so another 180 would be 647. Very close to the 665 min.
You can either try to find another piece or two that give you 18 more def, or if you have decent Argent Crusade and/or Sons of Hodir rep you can get a good head and shoulder enchant. Revered with Crusade gets you 37 stam 20 def to head, Honored with Hodir get's you 15 dodge 10 def to shoulder. Exalted with Hodir takes much longer but certainly do that once you hit 80 asap.

He needs more than 665 as a level 78. You need 535 raw defense skill, and your base is 10 points lower as a 78, so instead of 665 he would need another 49 Rating, or 714 total to be crit immune against 82s as a 78.

I'm pretty sure ToC is a level 80 instance even on normal, but I wouldn't say I'm 100% sure.

ToC are the mobs lvl82? Just wondered, because I thought that was just for heroics? Because if they are lvl82 then the reason you are struggling at lvl78 is probably because you will be getting
crushed
. Since blizz changed it with Wotlk it has become a widely forgotten mechanic, but a mob 4 levels above you will have a 15% (unless they changed the percentage) chance to land a
crushing blow

Crushing blows arnt based on level, they are based on defense vs. mob weapon skill. You can be 80 and be crushed by a 7x level mob if you get a large enough defense debuff. Meaning you can be 78, and if you make up for the lack of base defense with gear upto the mobs weapon skill, you wont be crushed. But yes he would probably be crushed and crit to death upon entering.
I'd simply do dailies till 80. Youll need the gold to enchant and gem those purples.

defense skill. Even in TBC defense debuffs did not affect crushing blow chance, because your base skill is determined by level and not buffs/debuffs. It was 2%* - 15%.
But since 3.0 they changed the mechanic, and now crushing blows can

be performed by a mob 4 levels or more above you.
Oh, and so you don't think im just pulling all this out of my ass:

(altho all this is slightly irrelevant if there isnt a 4lvl gap in the case of the OP - I only mentioned it since people in this thread mentioned lvl82 mobs, and i honestly cant remember the mob levels in regular ToC)

Thank you guys for your input, and I took your advice and I am just grinding / questing / doing dailies till I hit 80, I am half way done with 79, so hopefully within 2-3 hours of playing time tonight I shall reach 80 and start working on my tanking set, I already saved up a nice chunk of gold through questing vendoring greys etc. about 5k, but before I do anything I want to get my blacksmithing and minning up. Once again thanks guys really appreciate it!
In case you don't have it already, don't waste the money on epic flying. It's not necessary.
5k gold can
almost
take you straight into
progression
raids, especially if you've been doing Argent Tournament quests as you've been levelling.
It'll be enough to get you into heroics, at least.
