I'm just wondering what my hit should be around to maximize my DPS in KZ and Gruul's Lair. Currently I'm standing at around 214. Will this be enough? If it is indeed enough, would you recommend replacing some of my +8 hit gems with +8 agility gems?
Thanks for all the help!

You should still be using glinting noble topaz in your red sockets when aiming for a socket bonus and rigid dawnstones in your yellow sockets and sockets where you're not going for the bonus.
A higher hit rating is never a bad thing. Well, not until you hit 363.

305. You can reach 305 entirely in kara/gruul gear.
With the added 5% from talents that is about enough.
The DW penalty is 24.9ish %.
5 from talents means you need 19.9%ish.
363 is excessive, however a good 60% of all your damage will come from your whites, So it is recommended to try and cap that.
Frankly, after you reach the cap you can stack pure AP gems and top dps, just make sure Slice and Dice is always up on you and you'll be fine.
You are aware that the hit cap is 363?

I am completely aware of it. But if you read my post properly, youd see i was explaining why 363 is superfluous.
305 is fine.
I read your post properly, and saw this:

Care to explain that gem?

It is my impression that he means it is recommended that you try to reach the cap for hit. I think he's saying that with precision you need 305 hit rating.
With precision you need 363. He has recommended reaching 305 instead as 363 is excessive - but then subsequently suggested to reach the hit cap. He's not making any sense.

They changed the hit scale, it used to be 305 with the talent. Its a much higher scale now. I can break it down this way. I miss about 0.6% of the time in SSC and TK with 273 and the talent.
IMO when you get to 250+, start stacking AP. Then just take the upgrades and eventually you'll find yourself really high on hit.
I know. It was 308 before they changed weapon skill to weapon expertise, now it's 363.
You never gem AP instead of agi and/or hit (glinting noble topaz for red sockets where you're going for the bonus, rigid dawnstones where you're not) unless you're raiding with a hemo swords build.

I think the what alot of people dont; understand about hit rateing is that the ammount you "need" DOES NOT go up the further into raiding content you get.
It's all about balanceing what is attainable at that level of raiding compared to your other stats.
Saying +100 for Kara or +150 for Gruul is meaningless. The bosses are all the same level. Gruul is NOT harder to hit than any other boss in the game
In fact a T5 geared rogue will likely end up with LESS hit rateing than a T4/Kara/Gruuls geared rogue becasue T5 has virtually no +hit on it. However your attack power and crit really rockets up, the result is. Yes you a have LESS hit but do MORE DPS.
For me, every time i come across a potential gear upgrade I have to reassess my hit, AP and crit. It may be that a certain piece is a decent upgrade but i loose a load of hit... In which case I might opt to swap out some Agi gems for Hit gems or something.
People don't suggest more hit rating for later content because they think that the hit chance against later bosses drops. They suggest more hit rating for later content as the rogue's gear should've improved by then and increasing his/her hit rating is one of the single best ways for the rogue to increase his/her DPS.
It is about finding a balance, but it's also about keeping your hit rating at a respectable level. It's quite easy to maintain 270+ hit rating post T4.
