Click on the link Quest pointed you to.
Click on "Protection Armor" or "Weapons." You shouldn't have to be told to do that, of course; that should be your natural instinct, to click on the thing you want to know more about.
On those aforementioned pages are lists of the top gear from Northrend quests, crafting, and non-heroic instances (I believe). If you see a piece you like, clicking on it will take you to its database entry, where you can see how to get it, including what quest it drops from if it's a quest reward.
This is the exact information you want. Quest linked you to it. Before you claim it's not there, try putting in more than five seconds of effort. A tiny amount of research would have done the trick. I know this to be true, because I used
that very same thread
when I was gearing up.
EDIT: And before you come back with "how should I know," both the main thread and the spec-specific ones clearly state that they list quest reward gear. It's right there, all you have to do is read.

You might want to collect gold also for your epic flier. I know it has little to do with tanking, but it is this nice to have outside of the instance world.
Also collect gold, tanking is expensive. Getting epic gems, enchants, drinks, scrolls, food, and etc isn't easy and most high end guilds will require you to bring your own. So getting your cooking up is a good idea.
Once you hit defense cap it is safe to do any of the heroics. As long as you know the fights they are easy. Naxx 10 requires almost no upgrade in gear (besides being defense capped for raids). Naxx 25 you need to be in slightly better gear, but is still not very difficult. OS is also not difficult.
It is easiest to get gear from heroics, since the gear is better than what you get from Naxx and doesn't require the time of running the instance multiple times hoping you get the drop you want.
The first thing most tanks have to do is get their reputation up with Ardent Crusade and Sons of Hodir to exalted for the helm and shoulder tanking enchant. So doing quests in Storm peaks and Icecrown to open them up is a very good idea.

You need 535 defence for heroics. This will mean Heroic level bosses can not crit you. This will make the run far smoother. 540 makes you uncrittable for raids.
Defence Soft cap > Stamina at the moment.
