As far as I can remember, Strength is the stat you should be going for, "damage", as I believe it's 1 str = 2 attack power for warrior classes.. If I'm wrong, I'll need to check back to see what I'm thinking xD Agility could be good too, if you like to crit a lot. Stamina is fun as well, as it'll make it a little harder for you to get killed.. I wouldn't really be able to tell you about the arms or fury spec, since I've been protection pretty much from day 1. =/ Sorry. After typing this out, I've realized how little I can help you with my knowledge. But ya never know.

For a warrior, Strength does boost damage, Agility boosts chance to crit. Its a tough call on this one, strength will help your overall damage but the agility will allow more crits more often. I wrestle with this every time I look for new armor & weapons.
Also, my character is allergic to items that have +Spirit +Int. I give them to others (like my pally) before I become infected.

For dw fury warrior, 1. Str/AP 2. Agility/CR 3. Stamina. DW is aimed for PVE: less threat = less aggro = less health needed, but maximize on DPS by stacking Agility and Strength. For PVE you'll generally prefer stats with Str and Ag over AP and CR; attributes can get buffed by mark of the wild/blessing of kings not AP and CR.
For PVP Arms, 1. Stam 2. Str/AP 3. Agility/CR

You get more crit % by stacking crit rating than you do agi. However when you get Kings buff, this could even out the difference.
For Fury, go hit until approx 200. Then Str -> Crit Rating -> Stam. Do not gem for +hit or ap or agi. If you need crit, gem for crit rating. If you need more attack power, gem for +str (unless you have a heroic gem for +10ap/5crit or whatever). If you need more hit, swap some gear for +hit gear.

arms, str mostly. Crit is good, but it doesn't need to be concentrated on unless you have flurry in the fury tree.
I say stack str, get about 5% +hit(don't know what hit rating that takes at 50), then some crit. Stam doesn't matter that much while leveling unless you are undead for cannibalize then it would help some staying up longer.
Fury, same except you will need more crit to keep flurry up more often so you can keep the 25% bonus damage.

There's a couple things to note about which stats to get & it's very simple compared to many of the posts above (scattered around).
For Arms/MS builds, you want to stack Strength for attack power & Agility for crit rating.
For Fury dual wielding, you want to stack hit rating, attack power (Strength scales greatly in this respect), & agility for crit rating (it's important to keep Flurry active as much as possible).
For PVP, of course you want to put Stamina & Resilience above everything else. You will get plenty of crit rating from the PVP gear, don't worry about it.
For PVE, you'll find Stamina is a sacrifice for higher damage & utility...but you should always carry a set of tanking gear, etc. Your main focus will be dealing damage if you're not tanking & you need to stack your hit rating (for either spec), but especially so for dual-wielding.
