go mooncloth they seems to sell higher on at least my server due not many people specialized in it. You can make all three with tailoring every 3day 20 hr, but specialization gives 2 instead of one of that you specialize in.

I took Shadoweave tailoring on my lock and regret it.
90-100g for each Ebonweave....which I get 2 of.
Moonshroud is going for 150g or so and Spellweave for 150-200g each.
As YJMark said..take one to make cash.

Everyone was Shadowweave spec'd coming into LK, and it was arguably the best for the intro level 80 epics. Now, Moon and Spell are better. Since people won't spend 170g to respec their tailoring, they stay at what they know. Plus, Eternal Shadows are basically free on my server where Life is a bit more expensive and Fire is, well Fire.
As a priest, go Moon. Still make the other cloth every cooldown. Once you get the stuff crafted you need, look at the AH and switch your spec to the most expensive one, still making cloth on every cooldown. Before switching, I would look at the new patterns coming out of ICC, and see which cloth will sell the best.

I recently changed from shadow to moon because the healing items I need to make require moon. If not for that let ah prices decide for you.

My strat is to have 3 tailors, with each specialty. Every 4 days or so I get 4 of each type of cloth...
