Speaking from the point of view of a holy priest, there should be no problem healing you. I'd say your healer was likely multi-tasking or trying out his less-geared/experienced dual spec healing on you and believes that his gear was going to make up for any lack of skill. You're far from undergeared to be in heroics, you're fine.

Your health is just a tad low but I have a holy paladin myself and unless you are seriously bad at tanking, don't realize, and haven't typed it here, your healer was a moron. More likely he's a moron, based on what you said about Skadi (drake guy). Getting bored and dpsing as a healer in heroics occasionally is fine, but consecrating on whirlwind bosses is pretty hilarious.

the healer sounds like as ass; however, there are some things you can do to improve:
there is very little excuse for having an empty gem socket and unenchanted gear. if you don't want to spend $$ for BIS enchants/gems on gear you will replace soon, at least put on something that's 2nd tier. not doing that shows you are not committed to doing your best.
you are missing the most important glyph (blocking), and your spec is so-so. try
this build
for tanking heroics.
and get in some OS groups every week for your gloves.

I tanked heroics with 22.5k hp(miner+tauren) and a wooping 490defence.
Healer didn't complain once in about 5 heroics(incuding UP)
Some people are morons, live with it. As a tank you realy should be able to tell sombody to get his balls together and do his job. The next healer that whines simply tell him that he can always leave, if he does just get a better one(about 90% of the healers wil never whine about the tanks gear as long as he's defcapped), if he stays he'll probably keep his mounth shut.

Fact: Not all tanks take damage the same.
Fact: Not all tanks have the same spec.
Fact: Not all tanks are Warriors.
As a Healer, especially in a PUG, if you are not adjusting your strategy to fit the capabilities of the tank, you are a BAD healer. I always look at my tanks spec and health. I then use the 1st 5 pulls or so to gauge how well the tank takes damage and adjust my strategy accordingly.
Its the exact same as DPS not adjusting their strategy to meet the capabilities of the tank.

Anyway, I'm not sure why you see only 32% combined avoidance but, on my in-game character page it shows them all to be exactly 5% higher (talents aren't showing in calculations maybe?)
The Armory isn't showing stats correctly based on talents. You basically should add about 5% parry, 5% dodge, and about 1k health or so.
That being said, in my opinion, you shouldn't be tanking Heroic UP just yet. UP is one of the harder heroics, and just a pain in the butt with subpar heals, dps, and especially a tank. First two bosses aren't too bad but a poorly geared tank could mean wipe after wipe on Skadi the Ruthless.
You claim to have 48% avoidance unbuffed but I only count 32.85% total avoidance (with the extra 5% parry and dodge). Are you counting block rating as part of your avoidance stat btw? That combined with your low health to me means you should gear up a bit more before going back to UP. I would at least aim for 25k+ health unbuffed and closer to 38% avoidance (JUST parry and dodge %'s) to make it a smooth ride.
Are you heroic ready, sure. Just run the easier heroics (UK, Nexus, VH, DTK) and such to get rep rewards and collect emblems of heroism. Before you know it you'll have the gear to tank the harder ones. Tanking (esp the harder heroics) isn't as easy as dps. You really need a certain amount of gear before you should attempt some of the harder places. Can you do it, sure if you're group pulls you through it. But if you pug, generally you want to be more geared.

Impossible to say who's wrong. Player skill has alot ot do with it. Maybe your a bad tank, maybe hes a bad healer, who knows, since none of us know you. All we have is your side of the story which obviously paints you in a favorable light. You are fine gear wise to start heroics, and i don't think your build should be too big a factor.
For example, when my friend and me were in a similiar situation: me being a naxx-geared resto druid, and him being a fresh 80 warrior (leveled as arms, converted immediately to prot at 80). His gear was a bit worse then yours, and he had this most ridiculous arms/prot spec that went deep enough into arms to get MS and relentless assault or whatever its called; the reason being he wanted to abuse some bug where he could spam multiple revenges with 1 shield block. Despite this "awesome" revenge spam, he was taking extra of damage from not being too deep in prot. Was it difficult to heal him? a bit yes, but i also know skill-wise hes top of the food chain, able to multitask very efficiently with great situational awareness, and therefore he was able to surpass his #$%^ty build (which he doesn't use any more of course but i still like to make fun of it) and make it work. I like to think of myself as a decently good healer also :P.
Player skill makes a huge difference; so long story short, maybe either you, or the healer or both of you sucked. Hell maybe it was a overeager dps eating too much unnecessary damage that forced your healer to devote too much time keeping him up, which forced him to slack on you which lead to your death. There's too many possibilities.
