In an arena 1v1 situation, I pillar hump, try to stay at 100% mana by drinking frequently, and ice lancing if they attempt to rez their partner. When I have every cooldown up (mana gem/icy veins/mirror image/water elemental/trinket/wotf), I go offensive, duel style. If they die, great (they usually don't). If they don't die, then well, more pillar humping, drinking, trying not to die from dots, and stopping rezzes until 2.4 minutes pass and all my cooldowns are ready again. Very tedious process, very long, but I don't know a better way. (One mistake means you die)
Now, in a dueling situation, you want to put up so much pressure that they spend all of their time healing themselves instead of offensively keeping their DoTs up/dispelling/mana burning you. What I usually do is start off with a sheep (juke the SWD), and then spellsteal all of their buffs. Reapply sheep, steal any buffs that are leftover, and before the 5 secs are up, blow EVERYTHING. Icy Veins/Water Elemental/Mirror Image. I USUALLY don't shatter bomb right off the bat, I prefer pounding through the instant PWS that they'll probably throw up right when they pop out of sheep, and then I go into a FB>WE Freeze+DF.
Keep the pressure. You absolutely want to stop penance before the second tick can get in, and avoid psychic screams (you're losing valuable DPS time). They usually trinket the first Deep Freeze, then Pain Suppression the second. By the time you've got your third Deep Freeze ready, you've school locked two holy casts (hopefully), and you should be ready to kill with the third DF. At this point, a CS at 50% will let you easily finish off the priest as he's out of cards.
HOWEVER. This is a scenario in Durotar where there's absolutely no LoS for the priest to stop your casts, and after 3.2 I can't put up enough pressure going all out listed above anymore, on full furious glad geared priests. It's the only strategy I know though, so I thought I might share it, but I'm still working on a new one. =(

While I know little about pvp, I do know that Spellsteal is your friend against Priests.
it is and it isn't.. spellsteal is rather mana heavy, and priests aren't exactly light on the buffs.
fear ward, inner fire, prayer of fort, prayer of spirit, prayer of shadow protection, power word: shield.. plus any buffs they may have from their partner(s).
in 1v1 the battle against a disc priest (or a healer of any kind really) is a mana war, and if you're trying to spellsteal them clean, you won't win it. it's almost easier (and more mana efficient) to just burn thru their PW:S than anything else.. when you force them to start healing, spell-lock them and burn them.. if you can't win in that short time frame and they get a big heal off, then you probably won't win.

The reason why we generally spellsteal at the start of a fight is because you're piling on more buffs that will in turn, force them to burn more of their own mana to purge your ice barrier.
Also, having a priest completely clean of buffs when you start applying pressure is the best scenario to be in. You want the priest to be completely naked of buffs. The only spells that are worth spellstealing after the opener is renew if you're starting to get low on health, and PWS for emergencies, and only if you're CONFIDENT that these spellsteals will tide you alive to your next mana gem/evocate.
You absolutely do NOT want to SPAM spellsteal by any means however. Every GCD that you use spellstealing a priest that's not CC'd is a GCD he's using to heal himself/DPS you/dispel you.
Your goal is to keep him worried enough about his own throat that he spends all his GCD's healing himself instead of keeping SW:P and Devouring Plague on you, while dispelling your Ice Barrier. Since you can't heal past an Evocate, the more reliably he dispels your Ice Barriers, the quicker and more steadily you reach the point of death as both his DoTs tick. Worst case scenario is that you're hardly doing any damage at all and he throws a Holy Fire on you, and starts Mind Blasting+Smite spamming you. You need to get Ice Barrier up, and stop his dispels via LOS and Counterspell silence.
If you ever go offensive without your CDs, it's 100% guaranteed you won't put up enough pressure to out damage his heals, even with CS. If you get Icy Veins dispelled when you go on the offensive, your chances of victory also drastically drop. FoF getting dispelled drops your chances at victory, brain freeze dispels are also detrimental. The more the priest cripples your offense, the longer the fight lasts, which means you ultimately arrive at the point of no return:
You go OOM. Our DPM (damage per mana) is significantly worse than their HPM (heal per mana). In a straight up fight where a priest is sitting down only healing, and we're only spamming frostbolt, we go OOM first, and they can toy with us as they please.
So my point is, time your offensive pushes well. If anything goes wrong, your chances at winning drastically go down. Outside of the offensive pushes, you need to play incredibly defensive. Keep Slow Fall up as much as possible to help protect Ice Barrier from being dispelled, abuse LOS, drink often, and sheep frequently when you're not applying pressure.

Stranger... if it's alright with you, i'm gonna snag that for the updated pvp guide. what you wrote is a lot more detailed than what I wrote in the old guide... it's also everything i knew i wanted to say but wasn't sure how to word properly.
