Leveling a druid as feral is remarkable fun, because you get to stealth pounce someone, it just feels amusing. Changing to a bear to tank multi-mobs or when stuff goes bad is always an option, and there is almost zero downtime after 20 because you no longer use mana for offense, making it a pure healing reserve.
Shaman is a bit slow going until 20, where you get Water Shield, which drops downtime significantly. But it's still a bit mindless until 40+, where dual wielding and more abilities like Stormstrike come in. But I find shamans more stylish, so this is a personal preference thing.

Aww too bad, I was going to suggest Shammy. The slowest levels are to 20 for sure, but since with 3.3 the lowbie experience should be much easier.
If you level as enhancement, you'll have no downtime with your water shield and things really pick up after you get stormstrike. 42-56 was faster than 1-40 for me. After you get your wolves, you can solo all of outland and by the time you get to northrend you can dualspec resto for easy grouping.
Elemental is a bit slower, but doable as a leveling spec.
Endgame, Enh has one of the most active dps "rotations" and benefits from pretty much every single raid buff. ele is more of a turret but does good damage even with low gear, but has a boring rotation imo (FS, LvB, LBLBLBLB, repeat). PVP ele is fun as hell though.
Resto is amazingly balanced healing and easy to pick up.
I started as a hunter too, but it was too boring, my shammy is my main now.
