I've never noticed any lag due to my addons, and I use plenty.(around 50mb of memory usage)
Come to think of it, I don't know of any addons which actively upload or download any data, so lag due to addons sounds really strange.

My previous lag issues were caused by system resources being eaten up. Every time I would lag the hard drive light would be constantly on. It seems to get that way after an hour or so of gaming and is componded by showing up in Iron Forge, Stormwind or Shatt. My system had plenty of hard drive space but the memory was 1G. I often switch from Wow to Firefox-Wowhead and back. The longer in between me doing this, the more likely the lag issue would rear its ugly head.
I recently upgraded from an AMD x2 3800 to an AMD x2 6000 and wend from 1G to 2G of main memory. My lagging issues disappeared.
I suspect it is not the processor but the memory that is the real issue.

I've noticed that some of my addons can cause a reduced performance. Some of them query the server for far more information than you would regularily get. Ones that add guild memebers to the maps, or collect class information for everyone in chat.
When WoWEcon is running I tend to loose about 15 fps. Make sure your addons are up to date, and try disabling ones that may be fetching a LOT of information, see if it makes a difference.
Bar addons and changes to the UI, shouldn't effect anything.

Also, for any mods that have a configurable load-on-demand ability, make sure you configure them to do so.

It is possible for addons to eat up your bandwidth, but it is unlikely.
What addons do you have installed?
