For me, I say about 90% of my spells and abilities are key bindings. The one advantage, which I know everyone can agree on, is that it is much faster than clicking.
It allows you to do things more freely... like I only use my mouse for movement and at times, targeting. Otherwise, almost everything I do is with my keyboard. Hope this helps.

Not really, no. I can move my mouse to any place in my screen within the GCD.
I key-bind, but only because I find to more comfortable.

Tanking while mouse-moving is doing it wrong, because you cannot walk backwards.

I know I play clicking and find it to work out fine but was just a bit curious because most people would call clickers noobs. Was just wondering why its any better.
The main reason is that with keybinds, you can use muscle memory to use abilities instead of hunting around and clicking things. This lets you pay attention to your surroundings more and thus you won't die to the void zone/lava wave/other gimmick. It's also a lot faster when you have a rotation. Like, the difference between hunt-and-peck typing and touch typing.

Seriously, it's not about personal preferences, this is most efficient way of playing.
If you prefer clicking then by all means, keep clicking, but don't ever say it's as good as the above.

How might you configure your mouse to handle all looking and movement? I'm using the usual ASDW keys for movement. If my mouse could take care of that, i could train my keyboard hand to take care of abilities.

The only real advantage keybinds has over clicking is a cleaner ui.
You could keybind and hide the actionbars, something you can't do while clicking.
Guess if you use a wireless mouse (why does anyone use them? :/) you wouldn't be rendered totally useless if the batteries died, with keybinds. Although the same could be said about wireless keyboards.
