The race doesn't make too much of a difference, but undead (for horde) or gnome (for alliance) are the most popular choices due to more suitable racial abilities. As for professions, tailoring is pretty much the best profession out there right now for a warlock (along with a couple other classes). Anything along side that works, enchanting being the common choice.

Enchanting isn't a great profession to have as one of your firsts, because it will leave you broke with not too many ways to make money until higher levels and better enchants >.> A Blizzard CM even said that they intended enchanting to be the experienced player's profession, for someone who wants a challenge. The reason for this is that all the awesome gear you get from dungeons that you would normally sell on the auction house, you'll be disenchanting to get enchanting materials instead.
Tailoring is a good one though, because you can make armor for yourself, although beside enchanting it doesn't really have a "partner" profession. Going for herbalism and alchemy is another choice, as it has benefits for all classes and your groupmates will love you for it ^_^
