I asked my fiance about it and he said that your dodge is way too low, as well as your armor mitigation. Your agility should be almost as high as your stamina. It doesn't matter how much health you have if you don't have the mitigation to back it up. You'll lose that health very fast.
Stack more agility, and get better tanking gear. That ring you have, the Frostguard, can be replaced with a better tanking ring. Do not just go for stamina. You need agility as well.

On the original subject - tanking Emalon's adds when you have 29K HP and 33% dodge (unbuffed) on 10 man shouldn't be a problem. The damage you take is no more under your control, it's up to your healers to do their job. But going to tank the 25 man version in this gear means, as

said as well, stretching your lifeline too thin. Those adds can instagib your face if you have too little HP / dodge.
On the issue of armor, a Bear in ilvl 200+ epic gear should have around 28K armor anyway. Up from there the improvements are minimal and bonus armor from amulets/rings/weapons/trinkets is too small to make a real difference. Your main concerns are avoidance and stamina. Keep in mind that stamina is still the best scaling stat for a Bear tank, better than any other tanking class.

Kinda funny really, my stamina is roughly 3-4 times what my agility is raid buffed.
I was just going by what he mentioned to me, and some info may have been lost. He's a tank, I'm dps.
I think what he meant is that since his sta is close to 1k, to make up for the dodge he is lacking, his agi would need to be closer to 1k.

In the Stam vs Agility debate, its my understanding that stacking one over the other will benefit differently in different fights.
Stamina is the better stat to have plenty of for bosses that hit slower and harder, while Agility (avoidance) suits bosses that don't hit quite as hard but hit more often.
I'd probably prefer stamina over agility, simply because any HP I'm losing will be far more predictable for the healers. Avoidance can cause headaches for the healers on hard-hitting bosses. A minute will go by when the tank is coping just fine, then all of a sudden when you're healing the raid, with no block or parry the tank gets 2-shot.
But I'm not level 80 yet with my druid. My views come from a healing standpoint.

Your views are correct, Windstrum.
But the choice between stamina or agility is really just a matter of bears with little raid equipment. After 40% dodge unbuffed the DR become so high, that agility is just not a valid stat to stack. Plus, even after you get 40% dodge unbuffed, you are gonna go on upgrading your gear with things that has more and more agility... so there is really no need to use gems with agility anymore.
Id not say its just stamina for bears though. Expertise and Hit are also pretty desirable stats, at least for me.

Expertise and Hit are also pretty desirable stats, at least for methose should be desirable stats for ANY Bear, since physical damage represents 99% of our threat generation mechanics (Faerie Fire & Demoralizing Roar are non physical, but they represent that remaining 1%).
I will keep saying this in any Bear Tanking topic I encounter:
6% hit and 10% expertise
should be
minimum
values for any Bear Tank that wants to be good at it.

demoralizing roar ... will only pull them to you but wont keep them there....
I realize this isn't what you were referring to, but Demo Roar will 'keep them there' when you're rounding up a large AoE pull, spamming Demo Roar will prevent any mobs from 'Evade'ing away, its pretty useful for that (which is evidence that it counts as a hostile action and therefore generates at least some threat).
