put them in separate tabs in your chat panel

I'm not sure about single clicking, but to bring up my chat window I always hit my slash key followed by the letter or number of which channel I want to talk to. Hitting slash opens up that chat window without having to press enter first.

also there are sever addons that will do what i think you're talking about. Prat is one of them. But if you want simple get ChatBar
