The only time having more hit would be a waste is if you're over the white hit cap, which you are not at. If you just so happen to have a lot of hit on your gear that is fine, it can become detrimental if you go out of your way to gem or enchant for more hit because you'd get more bang for your buck gemming and/or enchanting for agility etc.
Having a lot of hit is fine, going out of your way to have a ton of hit is bad.
As for enchants, if you have a weapon you plan on using for a while Berserking is the way to go, it's our best dps enchant plain and simple. Mongoose is good but zerking is better.

Even if you are well over the poison hit cap under raid conditions, keep in mind that hit still provides some benefit in terms of reducing the chance for your white attacks to miss. Now, exactly how helpful hit is past the poison cap does depend heavily onto what other off-set pieces you have. ATM Armory shows that your boots, neck, back, bracers and belt all have hit on them. Perhaps you have lower-ilvl alternatives without hit? If you do, you should spreadsheet to see whether losing out on ilvl can be outweighed with "better" itemization.

i am in the same situation, tbh. running around 400-ish hit rating. the fact is that after some tests it seems to be the best gear for me.
i'm not talking about BiS, just i cannot get my hands on death's verdict and change my pyrite infuser because i have -10dkp and there is a loooong row of players before me (NEVER dropped, both in normal and heroic mode).

For a time, I ran with 510 hit and I never was that satisfied with my rotation. It feels so smooth to have Combat Potency triggers that much :]
But I've dropped a hundred hit to get better boots so that is no longer the case.

exactly. but it not a huge part of our dps (not like TBC times at least), so going for hit is not worth it. having more than the cap is not terribad but you can take other gear with no hit rating on.
