I find it amazing how many people don't understand how
Anti-Magic Shell works... It's AMAZING both PvE and PvP. Many people don't realize that AMS negates fear and other magical effects cast on you as well. It's probably the single greatest CD to use against a lock or shadow priest as it nerfs the hell out of their DoTs and silences their main source of protection. Just pop it as your running in and if you catch them just right you should be able to take out a sizable chunk of their HP and maybe
Strangulate or
Mind Freeze them to secure a win.
Icebound Fortitude is a nice pop when you're up against any stun crazy class like a Rogue or Feral Druid. If you get that 1 or 2 second window between a stun to pop this off you can sever their chain of stuns instantly and really throw them off their game. On top of this, it's a great mitigation ability to pop when your opponent pops their big damage ability (Like Bladestorm)
These two alone are abilities that every level 80 DK should have and use effectively to keep themselves alive. If you combo these with a standard PvP Trinket, you should easily have your out for which to use these abilities when you REALLY need them. Also, if you've gone deep enough into each tree there are the obvious mitigation abilities to choose from each tree.
Vampiric Blood +
Death Pact = Nearly full health bar every time. It's a great way to make your opponent really mutter under their breath, it's ALMOST as cheap as Lay on Hands. TBH, Death Pact on it's own is a GREAT CD for DK survival, proper utilization will ensure you live through many, many encounters.
Hungering Cold is not bad, it's great for forcing your opponents to blow their PvP trinket, or maybe sneaking in a bandage. Personally don't have much positive experience with it, not sure if it's good for interrupting or not, I would assume so. I guess something you could save for when the mage multi's or warrior bladestorms, etc...
Finally you have
Bone Shield,
Desecration, and
Anti-Magic Zone all within the Unholy Tree. Truly, Unholy seems the most solid and well rounded tree for PvP. The other trees just do not have the control and survivability that Unholy has. The Recast time on Bone Shield is a bit crappy, but it serves it's purpose for the 1 Talent point you spend on it. Desecration does so much for us in making it harder for those ranged classes to kite us, between Dese and
Chains of Ice they really won't be getting away, throw in a properly timed
Death Grip and if you don't get them there is just no way you will.
TL;DR = We have SO MANY tools to use to our advantage and it seems DKs were built for PvP. If you don't think we have survivability it's probably because you are bad at the Class, or you aren't playing a Viable spec... which kinda is the same thing right?
