Regarding the spec in your profiler, is it worth moving 3 points from Bladed Armor to Virulence in order to reach hit cap? My current spec looks a lot like what you've got there, but I'm not hit capped and I'm wondering whether to go ahead and move some points over until I can hit it with gear. Or is there another place to move them that would be better (our of Morbidity maybe)?

For heroics Hit > Expertise.
Expertise is more of a raiding stat while Hit is more of an all around threat/dps stat. Ideally as you get more gear, you'll get more expertise on that gear and when you start raiding, the expertise dodge cap (~6.25% chance to avoid dodges/parries, or around 25 skill) is something to shoot for.
As you get gear focus on stats in this order: Defense to uncrittable (540) then Hit and Stamina (try to go for a mix) then Expertise and Stamina (while maintaining special hit cap 8%).
I really don't recommend gemming for avoidance early on. Gearing is made a ton easier if you get lucky enough to have a weapon with a load of expertise on it. I'm still searching for the sword from Ony myself as I have a lot of gems going to expertise.

I guess my question though boils down to:
For threat generation, is hitting the hit cap (via 3/3 Virulence) better than the 3AP/180 armor you'd get from putting those three points in Bladed Armor.

With the spec in the profile, not really. In fact, it would be better to have 2 handed weapon specialization. Frost doesn't NEED the points in morbidity, but if you're a starter tank, it might help you out.
In the Intro to Death Knight Tanking in my signature, there are several frost spec options as well as options for the other trees that should still be valid.

I have bought a couple of things and respecced. I havent sorted my glyphs out yet.
What do I need to concentrate on the most? Is it strength and stamina?
OK there is alot of areas you need to look at.
The chest and gloves are PvP armour and really are not right for you.
You hit rating only needs to be 7% as you will have a 1% racial hit bonous on top of that.
Luckily ToC5 normal drops alot of good starter tanking gear ( item level 200 ) which will acellerate you equipment standard. I would strongly advice you getting the daily normal dungen done so you can get some badges in which your first priority would be buying the tanking signil.
If you have some gold try and get a Titansteel destroyer as they have nice stats for a beginner and will give alot of hit which is vital.There is alot of BOE plate tanking gear that is really good on the AH so I would get farming and buy some key things and really get that armour and jewels sorted. I have always found farming Relics of Holdir is a good and reliable way of making gold and if you go where you kill the mob for the quest "blowing Holdirs horn" you can just farm all day as there are plenty of mobs always spawning.

If you expect to get into endgame as a tank, think again.
DKs are getting the final nerf to tanking, -20% dodge = no avoidance.
It amazes me how many people read the first part of the blue post on this topic without reading the whole thing.
They're reducing avoidance to
reduce
the spike-y nature of boss damage. Everyone will continue to be able to tank in Icecrown Citadel. They're just not going to make DK or Bear tanking impossible.
